Chocolate Shocker!
American chocolate can never stand up to Europeon chocolate. I have toured the factories, sampled it from San Fran to Switzerland, and can say that the best chocolate comes from either Belgium or Switzerland, and think Lindt makes the best chocolate I have tasted. If you ever visit Zurich, I would suggest a tour of the Lindt factory, lots of free samples...

Raclette is yummy..it's like a grilled cheese sandwich on a little metal fork. But with tastier cheese than cheddar.
Black Walnuts
What is the difference between regular walnuts an black walnuts? I have been baking for years and in Canada, no one has even heard of a black walnut, I only hear about them from my American mom. Can someone explain the taste difference?
Trifle? [split from Trifle on the LA board]
My suggestion for an even yummier trifle of any kind, use a white chocolate whipped cream. Bring to a boil 3 cups of heavy cream, pour over 1 pound of chopped white chocolate, and stir until smooth. Chill very well, add a couple drops of vanilla extract, then whip as you would cream, and trust me, this will make any trifle that much better
French Fries - How do you like them?
A restaurant that no longer exists made "pachos", natchos using waffle cut fries instead of tortilla chips, with all the cheese, sour cream and guac. Hate to admit it, I still miss them.
Favorite Food Network Chef
I love Alton Brown. Smart and nerdy and kinda cute, but he knows alot about food. I find the cheesy-ness of the show really entertaining and informative.
Uses for pure vanilla extract?
I occassionally make a vinaigrette with a touch of vanilla for a lovely salad with pears and toasted nuts.
First date ideas-Vancouver
I live in the West Side, and would suggest a cab ride over the bridge to The Opus Hotel in Yaletown for REALLY good cocktails and a groovy atmosphere.
Cake in Vancouver
Try Senses in the Crowne Plaza hotel downtown, they make beautiful and delicious individual little cakes, and sublime chocolates.

I agree with both the Parkside and Bin 941, it depends on the style of dining you prefer. The Bin is a really nice way to enjoy tasting a wide variety of food if you like the tapas style and sharing dishes, and they offer an interesting variety for everyone. The atmosphere is funky and the music is great, and service is great. Vij's is also great, both places don't take reservations, though.
The French Laundry
I fell in love with Napa Valley my first visit, and have dreamed about dining at The French Laundry. Has anyone dined there, and was it a fabulous as I imagine?

Perhaps a bit more casual, but food at The Bin 941 @ Davie and Burrard is incredible if you like a tapas style approach and they have a great wine selection...The Parkside west of Denman is also lovely and not touristy. Blue Water Cafe is great if you like seafood.
bread pudding
I use day old croissants cut into large cubes, drizzle them with melted butter, then add a custard of egg yolks, whipping cream and sugar and flavouring, My secret is before adding the custard, add a healthy amount of finely chopped white chocolate to the croissant cubes in the baking dish (along with fruit and/or nuts), add the custard, and do use a water bath. It's all about the fat..but it turns out rich and beautiful.
