Frozen Abalone at 99 Ranch
Thanks Caroline.. that sounds like the way my dad used to prepare it. I grew up in Clairemont and there was a restaurant by the bowling alley that had abalone almondine..... my memories of the taste of that dish will never be matched!! Considering that abalone in a restuarant can run $75 and more, it will be worth the shot to try them. They weren't that expensive.

Is there a reason they are only good for stewing? They look like they have the black frill still on them, so I'm thinking they need to be cleaned........ any info on doing that?

Growing up in San Diego in the 60s was awesome for a lot of reasons, but one cherished memory is the abundance of fresh abalone that my dad (who worked the fuel dock on Harbor Island) would bring home and cook up for dinner.
I remember it was an ardurous process of cleaning, slicing and pounding before flouring and sauteeing.
I was shopping at 99 Ranch and noticed they have frozen abalone. It comes frozen and the abalones are small... about the size of a small fist.
Any ideas on this product? I'd love to try my hand at making some abalone, but I don't know how to tackle these chucks of muscle.

Be sure to use a fine mesh strainer and rinse under running water for at least 45 seconds. Shake to remove excess water. Use twice the amount in liquid - water or low sodium chicken broth. Bring to a boil, cover and reduce heat, simmer about 20 min. The seeds will start to sprout. Turn off heat. Fluff with a fork, replace lid and let steam for about 10 mins. You can eat it warm or cold.
I like to make it with black beans and season with cumin and garlic. Simple and delicious and so very very good for you.

The little grocery I shop at has deliveries from a local German bakery. The bread contains: whole wheat flour, rye flour, yeast, salt, water!
I buy the bread, but they have rolls too! I don't remember the name of the Bakery, but the grocery is Plowboys on Magnolia and Talbert.

How to prevent jello shots from leaking
do they look like this? This is what I used. I put the vodka in the freezer so it's very cold. I let the hot mixture cool off, add the frozen vodka. I use a big measure cup and just pour into the paper cups. I like this kind of cup because you can peel them back and get all the shot... the hard plastic ones are harder to eat from.

When I make jello shots, I use the hot water called for and replace only the cold water with the vodka. Yowza, you're making strong shots!! That may be why they're leaking.
Are your paper cups the ones with the pleated sides and rolled edge? That's what I use and don't experience leaking.

1 750 ml bottle brandy
2 vanilla beans, split lengthwise
Zest of 2 tangerines
Zest of 1 grapefruit
1 3 inch cinnamon stick
1/2 cup simple syrup
Pour the brandy into a clean container and add vanilla beans and zests. Let sit 1 week, then add cinnamon stick and simple syrup. After 1 more week of infusing, strain out all ingredients, reserving the vanilla beans. Drop the beans into a clean bottle, then fill with the brandy. (Note: to make simple syrup, bring equal amounts sugar and water to a boil until sugar dissolves.)

I have a pretty simple recipe that is tomato based. Mince a couple gloves of garlic and dice 1/2 an onion. Select the hot pepper of your choice. I like serranos which are a bit hotter than jalepenos but not as hot as thai bird chilis. You need between 1/2 pound and 2 pounds depending on how hot you like it. Toss those in the food processor with the onion and garlic and about 2 cups of tomato sauce. Puree until smooth. Pour into a skillet and cook over low heat until simmering. Simmer about 15 mins. Let cool. Stir in a couple tablespoons vinegar to taste and pour into a jar. Refrigerate.

I find the crumbs stick better with just the beaten egg.

The way I fry it for eggplant parm..... I always peel my eggplant and DO NOT salt and drain. I find the "bitterness" is in the taste of the peel.
Then slice 1/4" and dip in beaten egg and coat well with seasoned breadcrumbs. Shallow fry in hot vegetable oil.
Drain.... Slices will become softer as they cool. But, doused with marinara and cheese then baked... pure heaven.

Seriously! My Albertsons had ribeyes on sale for $4.99! And, med rare off the grill, they were FAB. I grilled aspargus, yellow corn and potatoes, too.
