Ever have ham loaf?

I acquired a Ham Balls recipe from a friend with mid-West roots (Iowa, I think). The recipe he gave me has ground cooked ham, ground pork and ground beef. It, like the recipe laliz refers to, contains ground up graham crackers as the binder.

Galangal

If you can get a copy of Cradle of Flavor from the library (or if you own it already), I believe there are quite a few recipes in it that have galangal as an ingredient. I found some in a local Asian market and froze what I didn't immediately use, too.

Wok cooking : hotter equals better?

Great information. The item you referenced looks perfect and I've ordered the one that is 12" wide. What size wok do you recommend using? I have a very large steel wok. It is really too large and unwieldy to use. I also have a smaller, flat bottomed one that I use on my stove, but I'm concerned that the non-stick coating on it will scorch right off when subjected to some real heat.

grilled avocado - anyone try it?

At a local Mexican restaurant, I've had deep fried avocado. They skin it, remove the pit and replace it (the pit) with fajita meat (your choice of chicken or beef), lightly bread it and fry it up. It's wonderful. I'm sure it's absolutely terrible for you, but I've never had anything quite like it.

The Best Steak I've Ever Cooked!

GrillMaster,

Do you think it would work if you followed the steps for drying out the steak in the oven and then finished the steak over an extremely hot bed of coals or a hot gas grill? I'm just trying to think of a method that will keep the heat and smoke out of my kitchen, if possible.

Buffalo Chicken Wing recipe (not in a fryer)

I also grill my wings. However, to simulate that crunchy fried texture, I give the wings an egg and milk bath and then toss them in a mixture of corn meal, flour and seasonings. Seems a little weird to put a breaded item on the grill, but it works great and the resulting wings will hold whatever sauce you like.

Time for... leftover ham!

I like what we refer to as "Ham Balls"--basically Ham Loaf made into baseball sized meatballs. Made with ground ham, pork and beef. Graham crackers for the filler. Sweet sauce over them made of tomato sauce, brown sugar and vinegar.

I have some on hand to make Kung-Pao Shrimp from a Cook's Illustrated recipe. I don't think I've used it in anything else that I know of.

Pulled Pork Leftovers

I use leftover pulled pork in a variety of dishes, many of them already mentioned here (quesadillas, tacos, hash). I also use left over rice or some noodles to make a quick fried rice or lomein.
