Fresh Fish - how long?

I caught a bunch fish (walleye) over the weekend and have the filets sitting in my refrigerator. I'd like to wait until the weekend to eat but I'm not sure they'll last that long.

Anyone know how long fish will stay good without freezing?

Wife's 40th Birthday in MSP

Question regarding ceramic knives

The Kyocera ceramic black blades claim to be made of an industrial-type ceramic, the hardest substance known to man except for diamonds.

My questions is - will these knives shatter if dropped? I had a white cermaic knife and loved it. Unfortunately, I dropped it on the floor and it shattered.

Granted the white was less expensive than the black. If the black doesn't shatter, then it's worth the price.

Why do many people still think going out on Valentine's Day is a good idea?

We have 3 young kids and any excuse to head out for a quite dinner is a-ok with me. We try and get out to restaurants most Saturday nights, so I always look for restaurants doing a special menu on V-Day (especially with a wine pairing). We've been dining out every V-Day for the past 10 years and have only had 1 bad experience. I'm all for eating at good restaurants, regardless of the circumstance.

Tequila from Mexico

My wife and I will be vacationing in Cabo San Lucas next week and I'd like to bring back a bottle of unique tequila for me and one for my sister who's watching our kids. Considering I know nothing about tequila, I'm hoping to get a few recommendations for her and me.

For her - I'm looking for something not available in the US and doesn't cost a fortune (not sure if she's a big tequila drinker, I'm purchasing more for the novelty).

For me - Again, something not available in the US. I'm looking for something I can serve guests who drink tequila and know a good one, so price is less of a consideration. Something a tequilahound would be impressed with if I pulled it out of the liquor safe.

Pour pepper vodka, dry vermouth, and cracked ice into a tall pitcher. Stir well, strain, and pour into a chilled cocktail glass. Garnish with an olive stuffed with a pickled jalapeno pepper and serve.

Party Beer

We had a similar party (anniversary) not too long ago and we served Summit (Extra Pale Ale, Pilsner, IPA, Porter, and Oktoberfest). Surprisingly, the Pilsner was served 2:1 over the the Extra Pale Ale. We liked the uniformity of the labels, the Minnesota connection for the out-of-town guests, and the beer is pretty darn good. Not to mention, I was able to get the beer from the same place with ease.

Shakers vodka?

I live in Minnesota, home of Shakers vodka. Each Christmas, I like to give out-of-state relatives something made in Minnesota. This year I'm contemplating buying all the vodka drinkers a bottle of Shakers.

My dilemma is I don't drink vodka, therefore, I have no idea how Shakers rates. Considering I'd rather give them something they'll enjoy, I'd rather switch the gift idea if my gift recipients are just going to stick the bottle in the back of the liquor cabinet.

If Shakers is fine, what version is the best (wheat, rose, or rye).

Need help with dinner for sick friend

Thanks for all the considerate replies. I should have mentioned his surgery was to correct an abnormality not related clogged arteries. As far as I know, he doesn't have any heart related diet restrictions. Not to mention, he hasn't had much of an appetite - I suspect pain and medication will do that do a guy.

With that said, any ideas for fun meals with wife and kids in mind? He's home now but in loads of pain and requires extra attention (thus the need for family meals for a few weeks).

Need help with dinner for sick friend

A college buddy of mine had open heart surgery yesterday and I’m slated to make dinner for him and his family (wife and daughters ages 8 and 12) next week.

Other than the typical pan of lasagna or tater-tot casserole (we live in Minnesota), can someone suggest a unique meal that’s relatively easy.

Any help is greatly appreciated!

Single Malt Irish Whiskey?

As a casual Scotch whiskey drinker, I’ve come to appreciate the vast variety of single malt scotches and uniqueness of each distillery. It’s fascinating how different they can taste based on the region where they were produced.

I noticed a single malt Irish whiskey the other day. Do single malt Irish whiskeys vary in flavor as much as Scotch whiskeys?

I was under the impression it was the smoke used to dry the grains that give scotch it’s unique flavor whereas the grains for an Irish whiskey were dried using “dry” heat (not smoke).

Any insight is greatly appreciated.
