sighhh. Cant use my grill.. no electricity provided.

Preheat the box - with boiling water. Use rice packs. I used to cater on a glacier food had to fly up and wait for skiers. I used rice packed ziplocks.(microwaved like for neck wrap) Some Ice packs work as hot packs too. I would boil and pack around food.
cambros keep food hot for a LONG time.

Why Are Chain Restaurants So Much Worse In Hawaii

I am located in Alaska - so chains have similiar issues here.
A couple of factors contribute, as KM pointed out - shipping is one. The items that the chain has access to in the mainland may not be available. The other is training - not work ethic. The chains on the mainland are inspected more by corporate.The remote locations are allowed to devaite more from corporate specifications due to their location.

Great Fish Market near Providence?

Zeeks creek in Jamestown is seasonal....BUT has the best fresh fish. Always what is freshly caught. High quality - fresh fresh.

pretty sure its first come. It is a daunting wait. Check out Spenard roadhouse - its about same distance - has something for everyone. American food with twists - very plain items and fun stuff too - runs from tater tots and mac and cheese to miso glazed pork belly and letuuce wraps - they have pizza too.

Its really good beer really good root beer fast service but the wait is 30 min on the super fast side to 1.5 hour

there is an outback within walking distance and within cab distance is the mooses tooth, very busy brewpub noisy - ok with families expect a wait fun atmosphereu are near many chain type places. Romanos italian is pretty close -Spenard Roadhouse is good pretty close and fun

Thawing Cookie Dough Fast!

make the dough - form into a log with the aid of waxed paper, parchment paper or plastic wrap
the chill
then you can cut chunks ( thick slices)
place on sheet pan warm and cook - could probably cook without warming but the cookie won't spread as much

"Harvesting" green cabbage leaves

I take the whole head - cut the stem off/ out . Removing ALL of the stem - I then gently blanch the whole thing and peel them off as it goes - as it cooks slightly it gets easy to pull off.
I then shock as they come out.

I clarify the butter and it gets rid of the milk solids.. I use a pit of parmesano reggianno - (sp) sheeps milk based and when I really want it to be a bit creamy I add a bit of soy cream cheese
I use broth as main liquid

reality check - avocados in my neck of the woods are running about 4 bucks a pop. If they were that cheap here I would be an avocado ( as in, u are what u eat)

gf breadcrumbs don't seem to have enough integrity and are a bit dense and if cooked in sauce the bread crumb kind of leaches out. It can be done - I make my own gf crumb with a better result -
