Substitution for red curry paste?
I know, I couldn't believe that grocery stores in SF did not have it! I was on a bit of a time crunch, so I just went to major grocery stores (aka Cala) and of course they didn't have it in stock. Oh well, I just used red curry powder and hot chili garlic sauce and it turned out okay. I will try it with the paste next time though.

Substitution for Leeks?
I am making a Thai-style ground beef recipe tonight that calls for 1 cup of sliced leeks. I've never cooked leeks before and was wondering if there is a comparable substitution for them. What do leeks even taste like? Should I leave them out altogether?

What is the purpose of cornstarch? Most stir fry recipes ask for it, and I'm not sure what it adds to the meal.

I wanted to make a stir fry tonight, and wanted just a basic sauce to go with some vegetables I have on hand - broccoli, asparagus, onion, and mushrooms. Preferably something with garlic. Thanks!
white bean recipes?
This is a really great salad from cooking light and the beans add a bit of substance. I served it with a mustard maple salmon but any type of meat would go well.
Argula, white bean, and red pepper salad
Salad:
3 cups torn arugula leaves
1/2 cup chopped bottled roasted red bell peppers
1/3 cup vertically sliced red onion
1 (16-ounce) can navy beans, rinsed and drained
Dressing:
1 1/2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, minced
To prepare salad, combine first 4 ingredients in a large bowl.
To prepare dressing, combine vinegar and the remaining ingredients in a small bowl, stirring with a whisk until blended. Pour over salad, tossing to coat.
Yield: 4 servings (serving size: 1 cup)
Muffin cup question
Thanks! I just baked the muffins without liners, and they turned out fabulous! Here is the recipe if anyone wants to make them its from Cooking Light - great for breakfast.
Low-Fat Strawberry-Cinnamon Muffins
1 1/2 cups all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2/3 cup vanilla fat-free yogurt
1/4 cup butter, melted
3 tablespoons 1% low-fat milk
1 large egg, lightly beaten
Cooking spray
1/4 cup strawberry jam
1 tablespoon sugar
1/2 teaspoon ground cinnamon
Preheat oven to 375º.
Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and the next 4 ingredients (flour through salt) in a large bowl, stirring well with a whisk. Make a well in center of flour mixture. Combine yogurt, butter, milk, and egg in a bowl, stirring well with a whisk. Add yogurt mixture to flour mixture, stirring just until moist.
Place 12 foil cup liners in muffin cups; coat liners with cooking spray. Spoon 1 tablespoon batter into each liner. Top each with 1 teaspoon jam. Top evenly with the remaining batter. Combine 1 tablespoon sugar and 1/2 teaspoon cinnamon; sprinkle over batter. Bake at 375º for 15 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack for 15 minutes. Remove from pan; place on a wire rack.
Yield: 1 dozen (serving size: 1 muffin)
Slow cooker/crockpot suggestion
I am interested in buying my first slow cooker (same thing as a crockpot, right?) and was wondering if anyone had any recommendations. It is usually just two of us cooking, so what size should I get? Any particular brand that is best? Thanks!
Muffin cup question
I am making these strawberry jam cinnamon muffins that call muffin foil cup liners, and of course I have none. Do you think that they will be okay without the liners, or are they essential?

No, I am not trying to lose weight, but yes, I would like to know which fish has more nutritional potency. I actually just looked at the google link that was posted above, which has a good comparison of the different fish used.
Where to eat near Polk and O'Farrell?
Thai: Chai Yo on Polk St - great pad thai and pad see ew. Vietnamese: Either Pagolac or Mangosteen, both on Larkin. Indian: Darbar on Polk St. All these choices are very inexpensive, but have great food!

Yes, I understand "good for you" is a vague term. I was looking more for a comparison of the different fish that are offered at sushi restaurants. My favorite is hamachi, but I wasn't sure how that stacked up to a fish like salmon or tuna nutritionally. What fish is the best overall in terms of calories, fat, and other factors?

Wondering if you can make a mac and cheese with goat cheese and if so, does anyone have any good recipes for it?

For great italian and a non-touristy spot, I would recommend Ristorante Milano. Make sure you have their homemade pastas and the tiramisu. Amazing and much better than Nob Hill Cafe! For sushi, I would go to Sushi Groove in Russian Hill. Vietnamese - go to Aux Delices on Polk St.
Healthy soup recipe?
I'm in the mood to make soup and would like a really great, flavorful soup recipe...no real restrictions, can have meat, or any kind of vegetables, and would prefer it to be somewhat healthy.

UPDATE: Just returned from Calistoga and it was fabulous! We ate at Cindy's Backstreet Kitchen on the first night, where we had juicy and perfectly cooked duck (definitely must get if you go), Flatiron grill on the second night, which was pretty good, and then we topped it off at Wappo on our last night. I had the salmon which was very good, and my boyfriend had the green curry butterfish which was absolutely amazing! Although we have to say that the dessert, a Pavlova, was overpriced and not very good. We also hit many small unique wineries up in Calistoga: Vincent Arroyo, Summers, Casa Nuestra (our favorite, which was funky and cute), Dutch Henry, and Bennett Lane. So fun and we can't wait to go back! Thanks for all the advice!

I wanted to make stuffed mushrooms as an appetizer for a special dinner coming up, and was wondering if anyone had a great recipe for them. It can be made with meat or be vegetarian, I don't really have a preference.

For the BEST homemade pastas and tiramisu for dessert, go to Ristorante Milano on Pacific and Hyde in Russian Hill. Looks like nothing on the outside, but is very cute inside and has reasonable prices for amazing pasta dishes like tonnarelli or gnocchi.
