Ramps Recipes

I just bought some ramps at the Farmer's Market yesterday. I'm so excited! I've been thinking of how I can use them. Maybe a little stir-fry with shrimp. Or sauteeing them and using them as a bed for seared scallops. Roasting with onions and chicken. Sauteeing in onions and garlic and mixing with pasta.

What's the best method to make pickled red onions?

Yeah, that I was the thread where I discovered they ship at all. But only within the continental US. Which is helpful when I want cheesecake, but not for London.

Yeah, I'm not sure I can afford to ship $100 cheesecake. She might just have to suffer without one. If I do choose to do that, it'll probably be from S&S, though.

I have a friend in London who's been craving NY Style Cheesecake and I really want to ship some to her, but I can't find anywhere that ships oversees. I'm hoping you fabulous chowhounders know of a decent (preferably better than that) cheesecake place that would ship to London. Or just a good cheesecake place in London and I can have it shipped from there (but that seems unlikely). Thanks!

Creative Tuna Salads

I found this recipe over at Smitten Kitchen, and I LOVE it. The only thing I change is omitting the nuts, because I very rarely have them on hand.

10 to 12 ounces good-quality solid tuna packed in olive oil, well drained*
2 scallions washed, trimmed and chopped fine
6 pepperoncini peppers, destemmed and julienned
3 tablespoons chopped fresh dill
1/4 cup roasted or smoked almonds, chopped roughly, or a small handful toasted pine nuts
1/4 cup good-quality olive oil (or the oil the tuna was packed in)
1 tablespoon smooth Dijon mustard
1 tablespoon whole-grain mustard
1 teaspoon balsamic vinegar
1 teaspoon fresh lemon juice or more to taste
1/4 to 1/2 teaspoon freshly ground black pepper.

Vegetarian & Low Carb?

I'm looking for recipes that are vegetarian, but aren't pasta-based. Every Thursday, my roommate and I alternate cooking. However, I'm trying to cut down on empty carbs and she's a vegetarian. I've made a bunch of eggplant-based dishes, but after that, I'm drawing a blank. Any suggestions?
