Classy Buffet
I have been asked to manage a christmas event for work & want to organise a classy buffet. What sort of food could i ask the caterers to suppy? I really do not want hunks of chicken legs & crisps!

I am just getting the hang of fish...dont like it much but trying to enjoy it as hubby like it
Normally grill tuna in my George Forman grill & its fine if i dont over cook it as it goes dry.
what is the best way to cook a tuna steak & what vegetables and sauce can i serve it with

The soup was great, I cooked it in the morning & kept it hot in the slow cooker during lunch. So I had time to enjoy the day with everyone as the rest of the food was mainly cold buffet.
People were a little nervous to try it at at first and nearly all declined, until one of the twins tried it and loved it. Everyone was very impressed and the recipe has been copied by many.!
Just an update for you on the rest of the scouts still in Nepal - They are now waiting for good weather for the last push to the summit. www.scoutsoneverest.org.uk

Yes please to the soup. I mainly wanted cold food so I wasnt spending all my time cooking & missing out on all the fun. I can have a pot of soup bubbling in my slow cooker .. perfect thanks

My boys will be back from Everst base camp on the 7th May, after 6 weeks climbing, trekking & helping a local school ( www.scoutsoneverest.co.uk )
We are having a family gathering celebrating their acheivements when they return.
I would love to serve a few items of traditional Nepali food, but most I have found need to be fried or served hot. I would like the dishes to be a healthy 9if possible) & to be able to prepare most of the food the day before.
Any ideas?

I have an allotment full of fruit.
We froze most of it last year and made jam to raise funds for my Twins (www.scoutsoneverest.co.uk) Made Rumtopf, puds, smoothies, and even more jam.
What i would really like to make is a cordial or concerntate I can add to flavour water.
Does anyone have a recipe?
Dinner crisis - Too tired to go out, didn't go shopping, having company, help!
Dependant on what you have in your cupoards really. if you have tomatoes (tin or fresh) then a veggie pasta dish is easy. You could always layer the eggplant, cooked pasta & tomato sauce in a dish & oven bake - cover top with cheese & bread crumbs. (i have used crisps & pretzels crackers once!)
Leaving you time with your guests while its in the oven & not too much effort.
My emergency dessert is:
Put fruit, jam or syrup in greased bowl. (2pint)
Mix together 4oz self raising flour, 1 tsp of baking powder, 4oz butter, 4oz sugar (1/2 cups in USA i think) , 2 eggs & pinch salt.
Pace on top of fruit , jam etc
Cover & microwave for about 5 mins till done
serve with cream, ice cream, or custard ....
What ever you do, I am sure they will just be happy to see you!

Best herbal tea to drink cold and unsweetened?
Any green tea. But dont let it stew as it will become bitter. I usually drink Chinese jasmine from the local Chinese store, or Twinings green tea - pear & apple/ lotus flower & orange/Ginger/Peppermint. The ginger one is excellent for digestion & hang overs & the Peppermint one is great for when you have an upst tummy. The rasberry fruity drinks I dont like as they just taste like hot Ribena. Just try them all .......Have fun
