South End, Boston, MA. 4am. After the longest service shift in the history of Newbury Street. Northern Italian Joint--braised antelope with a '95 Granbussia Riserva Barolo. On the house after a play of hips and wrists with the most talented female sous chef in history.

In no particular order: Aqua (San Fran), Le Grand Zinc (in Paris), El Bulli, Pasha (London), a couple of places you have never heard of in Interior Mexico and Central America, Le Reve, any Four-Five Star on a Tuesday.
