Dried sage what kind?

I want to make a bread stuffing and the recipe calls for dried sage. Would this mean ground or crumbled sage leaves or does it matter?

Cookbook recs slow cooker

I am new to slow cooking. I bought the William Sonoma slow cooker book - very good. In the past month I have made pulled pork sholder, pea soup, lamb stew, cauliflower curry. Chapters are divided by prep time which is handy.

I just purchased a slow cooker that has a hole for a thermometer probe. The instructions don't mention anything about covering it up when not using the probe. I think you can safely leave it uncovered.

Whole chicken - what to do besides classic roast?

Hey, I know Marsha is all set for dinner tonight but I had to post this for future consideration and for other Chows out there who might be just starting to think about dinner tonight.

It's paprika roast chicken from Gourmet Feb issue. At oven temp of 500 it cooks in 30min and the spice mix is yummy. I have already made it twice.

Visiting Napa-- lunch?

V. Sattui vinery in Napa Valley has a great market place where you can get gourmet sandwiches, prepared salads, etc. It makes a great light lunch or snack. They have informal picnic style eating area both inside and out. The vinery itself is a lovely setting. Enjoy your visit!

Here's an idea - macaroni & cheese. I went to a retro dinner party and this was a big a hit with everyone. You could make two a classic and a "gourmet" version with more adult ingredients like stronger cheese, prosciutto or lobster. For sides a mixed green salad and either green beans with bacon and shallots or brussel sprouts with bacon and garlic.

2008 Holiday Dinner Hits and Misses

I missed on the stuffing that I made from scratch for the first time. The bread cubes were too large and crusty. As result the stuffing was too dry and hard to eat - needed a knife to further cut up the bread.

The turkey was a hit. I tried a sage, garlic butter rub under the skin. I also roasted at a higher heat this year (from Alton Brown). I was pleased with the results and faster cooking time. I also made brussel sprouts with bacon and garlic and roast potatoes. I par boil and then roast the potatoes in crisco. I know this is terribly unhealthy but it's how my mother always made them and I love them!

help with the cuts of roast

You can roast the sirloin tip. My mother often used this cut when doing a roast beef. Here is a recipe from the Canadian Living website. I haven’t tried this it but this site/magazine is well known in Canada for its recipes.

How do you brine chicken?

Thanks everyone for the tips!! I found Alton’s video on the food network – it was helpful. In the end I went with a wet aromatic brine a blend of the TK recipe and the CI - CI recipe minus the cloves but added lemon. This was driven by what ingredients I had on hand.

Thanks for posting the NY Times article. It was interesting but I did the brining before your posts. I have to say I would do it the brining again. I thought it resulted in a plumper, juicier bird and I didn’t negatively affect the pan sauce (ie making it too salty). I will also try the dry brine technique to compare.
