Middletown Shop-Rite Butcher

This is to commend the butcher there. I don't know if in the past few months they hired a new one, but the quality of their meats has gotten allot better. The staeks are thicker cut and eveything there looks great. I needed a mess of beef shortribs for a braise and he cut me some that had to be 3 inches thick and some of the nicest looking ribs I've ever seen. Kudos to you!!

I buy the cheap less than a buck paint brushes at the hardware store then just brush the oil on. Let it soak then wipe off with paper towels.

You can try citric acid. That's what they use in the dishwasher cleaners for the white interior units.

What Bad Things Happen To Your Wines When They Are Stored at Temps in the '70's?

Exactly! I had my thermostat set to raise and lower the temp in our house for when we go to work and then come home. I lost about 10 bottles from the change in temp. A constant temp in the low to mid 70's should not be an issue if you drink it up within a reasonable time.

I'm hooked on his Flank steak marinade from "How to Cook Everything" It has lime juice, fish sauce, soy sauce ,and ginger among other things in it. Can't wait to fire up the charcoal for one soon.

What do you like in a state other than its "proper" one? Frozen rather than chilled? Stale rather than fresh? etc.

My grandmother used to make a thick saurekraut soup with roux and ham hocks. When cold it was very gelatinous. I used to love putting it cold on a hotdogs. It drove her crazy. I used to eat her lemon merangue pie in layers too, the merangue, the lemon filling then the crust. I'm amazed she continued to cook for me I tortured her so.

Tahini and Sesame oil are very different but it may work. Sesame oil has a wonderful nutty taste and aroma Tahini is more like peanut butter.

That's what i do too. I bought felt discs I stuck on the bottom so they don't scratch the table.

Cleaning enameled cast iron

Just a thought. Has anyone tried using something like Oxiclean to clean the enamel? I don't know if it's toxic but it isn't clorine.

There is a new bakery in the "junction" of Leonardville rd and Main St in leonardo. It is called "The Carosel Bakery" and it looks good. All I tried was the rhy bread it is was very good.

Cleaning enameled cast iron

Clorine is basicaly a gas that disapates and does not last. A good rinse with water and allowing to air dry for a day or so and there will be no bleach (clorine) present.

One Bay Leaf Question

I understand the heating of the spices and do that. But I don't think I've ever made a recipe that tells you to add the bay leaf then, it usualy tells you to put it in once the liquid is added.

To be honest, I for one can't taste Bay leaf in food. I have bought good quality leaves even fresh and I just don't get it. My wife swears she can taste it if it's added but I don't seem to pick up a difference.
