Anyone else love Wegmans?
'Visited the Syracuse area last month from Westchester & took a printout with me of all the Wegmans located along my path. 'Visited several & since my motel had refrigeration & a microwave, actually bought several of my meals on my shopping trips. And HAD to have the chocolate cake ... thank goodness they make it in a smaller size too! 'Planning a small retreat in the fall down the Jersey shore & 'will actually have a "fieldtrip" to Wegman's as an outing for the group.

I also highly recommend their prepared salmon, seared tuna, seafood pasta salad, quinoa salad, mango jicama salad ... lots of yummy choices! Suggestions for a St. Patrick's Day dessert
Traditional St. Patrick's Day confection ... you can even add a little green coloring to the cake and/or frosting if you so desire.
BLARNEY STONES
4 eggs
1-3/4 cups sugar
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup butter, melted
FROSTING:
2 pounds confectioners' sugar (about 7-1/2 cups)
2/3 cup milk
2 teaspoons vanilla extract
1/8 teaspoon salt
6 cups finely chopped peanuts
In a mixing bowl, beat the eggs, sugar and vanilla until thick and lemon-colored, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture. Beat on low speed just until combined. Add the milk and butter; mix well. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into squares. Cover and freeze overnight.
For frosting, in a mixing bowl, combine confectioners' sugar, milk, vanilla and salt; beat until smooth. Frosting the top, bottom and sides of frozen cake squares; roll in peanuts. Place on wire racks to dry. Yield: 2 dozen.
Anyone have recipe for Salt & Pepper Squid & Shrimp?
I'm sure you could adjust the following recipe to include the squid, scallops & jalapenos.
STIRFRY SALT & PEPPER SHRIMP
INGREDIENTS:
1 pound large shrimp
2 tablespoons cornstarch
1 teaspoon sea salt or kosher salt
3/4 teaspoon freshly ground black pepper, white pepper or Szechuan peppercorn, or to taste
3 tablespoons vegetable oil, for stir-frying
1 garlic clove, minced
1 red chilli pepper, deseeded and chopped, optional
1/4 cup chopped green onion
PREPARATION:
Soak the shrimp in warm, lightly salted water for 5 minutes. Rinse in cold water, drain and pat dry with paper towels. Lightly coat the shrimp with the cornstarch.
In a small bowl, mix the salt with the freshly ground pepper and set aside.
Heat 2 tablespoons in a preheated wok on medium high to high heat.
When the oil is hot, add the shrimp and stirfry until they turn pink. Remove from the wok. Clean out the wok.
Heat 1 tablespoon oil in the wok. When the oil is hot, add the minced garlic, chili pepper and the salt and pepper mixture. Stir-fry until fragrant (10 - 15 seconds) and then add the shrimp back into the wok. Stir-fry to coat the shrimp in the salt and pepper mixture. Stir in the green onion or serve as a garnish with the shrimp.

Has a lot changed since then??? We had brunch there yesterday and what a DISAPPOINTMENT!!! Service was mediocre, as was the food. I certainly expected more of a place like this than tired looking entrees, serving utensils that begged to be freshened, boring salads, and boxed and thawed desserts. I do agree that the view of the Hudson is wonderful but that's about it. Anyone have any better recommendations for "Best Brunch in the Hudson Valley 2007"???
