You might try talking to Nick Macri who recently took over the Border Springs Lamb shop in the RTM. He is carrying all sorts of meats now and making cured meats, I dont know if he plans on smoking but he has all sorts of tongues!

I think you are confusing Fuji restaurant - with Matt Ito and his son Jesse - in Haddonfield with Mt Fuji restaurant in Deptford/Collingswood. I have never been to Mt Fuji but Fuji is very good and has the chefs as you describe them.

Brigantessa adds depth to the city's Italian food scene

We were there two weeks ago and really enjoyed it - but we like Le Virtu also. I expected a crispier crust on the pizza - we had the eggplant one with the ricotta stuffed "handle" - but the flavors were spot on. Our appetizers were specials so not on the regular menu and I dont recall their composition. I had the lamb pasta that was excellent.

Need help for Christmas menu

I think you could do the mashed potatoes with the fish if you left skin on the fish and made it very crispy for contrast.
For the Eggs Benedict - do you have access to quail eggs or poulets? I would just "downsize" the dish - use biscuits or cut the english muffins down to size with a cookie cutter.
I agree with the recommendation for a roasted mushroom soup vs. cream.

Last year we went to Positano Coast...

Thank you all for your help - we ended up at Lo Spiedo which worked very well! Everyone had a great time, enjoyed their food and, it came out to just over $20 per person (no alcohol)

I think salt is fine when used correctly. I do not purchase canned/jarred/boxed food, or frozen entrees - way too much salt added. I buy fresh foods that I salt while cooking - because this is when the food will absorb the most salt flavor and you will not need to add as much to get the same results. I rarely add salt at table. I also experiment with different salts - for example I have a Maine Sea salt that is very salty.

What makes the Philadelphia Italian Hoagie different from the rest?

The hoagie shop I worked in 30 some years ago in East Oak Lane had Oil, vinegar, oregano and S&P in a squirt bottle to dress the hoagies. Never a lot of vinegar - probably about 1:6 with the oil. But the question that was asked when taking the order was "Oil on that?"
