Lamb kidneys! Woo Hoo!
indian style lamb kidneys with ginger garlic chili paste and salt. they cook very fast. i dont use anything else. your minimal pantry may be a limitation. i finish mine with a little butter and then eat them on toast. very delish !
Suggestions for a summer soup?
i make a white gazpacho. its very delish only has tomato as garnish and its no cook. interested ? let me know. happy to share recipe.
Dipping and Dunking: Making Comfort Food More Comforting
Any soup with bread. its the only way to eat soup. a memory of a spicy lamb soup with freshly baked persian bread. DH and i frequently made a meal of this. in indian food dipping and dunking is the only way to eat the rotis, parathas and naans with curries. there is something very very satisfying about eating with your fingers and licking them off after the dip/dunk.

oh yes one more to try. i love the inifinte possibilities. have been googling all sorts of congee recipes but todays will be with smoked turkey sausage, then tomorrow another meat. so on and on. so liberating and easy.

made this in the morning for lunch as you suggested. its fabulous. thank you very much. will play with other garnishes and i did print out bittman's recipe to use some of the ingredients as suggestions. i might try dried mushrooms next time and grate the ginger fine. also needed some meat and chicken sausage or frozen meat ball chopped up would also be interesting. again thank you. a good lunch recipe.

we were in breck couple of years ago. breakfast at a french crepe place and dinner at relish were outstanding. would highly recommend the dinner place was pricey but well worth it.
warm avocado salad in shell?
Try shrimp in a spicy sauce with a tiny bit of onion and lime in the avocado shell. you can use the avocado bits as garnish with additional lime and a sprig of cilantro. i would probably stir fry the shrimp with sriracha type sauce keeping it simple. just the imagination so cant give you an exact recipe.

I used up the last of my cranberry relish spread over cream cheese and served with crackers. took it to work and was almost mobbed for it. very easy make ahead.

I make cranberry relish with dried cherries, brown sugar and cardamom. very easy no cook recipe. different and yummy
Tandoori turkey?
I wanted to let you know, had just such a bird a few years ago at a friend's. weird is how i would describe it. somehow the indian spices did not work with the turkey and i refused to eat it after a small taste. luckily no one noticed my aversion and most people thought it was very good. but to me, something about mixing up the tastes was not working out. i would try a cutlet in advance and see how you liked the tastes and then jump in with the whole bird.

I do want to add, use the dry mixes and pastes but also add in some fresh ingredients whenever possible to enhance their flavor. whenever i use the dry mix, its just as a flavor enhancer not following the recipe completely on the packet. play around with it to suit your taste and that will be the best way to use them.

sanjeev kapoor does a cooking show on indian tv called khana khazana and he has these mixes for curries etc. last year i took a few packets of mixes on vacation with me so i could use for curries. they are ok i felt the mixes lack the oomph of the 'cooked from scratch' meal, but in when you are in a hurry, they work which is important. there are different kinds of dry mixes, some you just add meat of your choice others, depending on the curry you would add other ingredients.

do you have an indian store close by ? there are dried mixes available by sanjeev kapoor and shan masalas which really are pretty simple to use. dont need a lot of other things to make a curry in a snap. there are times when i use the crockpot before leaving for work to make dals and other types of curries which benefit from slow cooking.

i have a small round egg pan which produces perfect round fried eggs. so i got carried away and also bought one for omelettes. now i can make perfect egg sandwiches on english muffins or bagels using my pan. so they are available. maybe thats what they use ? j
Why does my roast chicken always do this?
really glad to read your post and the replies. i have had this happen on numerous occasions with organic chickens, amish chickens, bell and evans chickens. after reading the replies i will attempt roasting again but resting longer. i agree with you the red stuff is gross, always makes me think it is undercooked even though the temps say otherwise.
what brand to buy for jasmine and basmati rice???
i have used pari basmati rice with good sucess for many years price wise it is comparable to tilda and the rest but i can usually find buy one and get one free deals. my friend uses a brown basmati rice with some sucess but thats no name

i hate to say this but we were in hawaii in july and much anticipated roy's dinner. ordered ono and sent it back uneaten. the fish was not cleaned properly and over cooked. awful meal very expensive. they were very nice comped the dish for us but would not go there again. which roy's are you visiting ?
Interesting way to use honey?
Roast leg of lamb with honey and soy. then slice thin and serve in a thai red curry over rice.
vanilla ice cream - no cook/no eggs in ice cream maker?
I usually make icecream without eggs. my recipe for mango and strawberry icecream is to mix puree with heavy cream and condensed milk. then use in the icecream maker. makes a very rich icecream.
Sick in bed comfort food
You reminded me, when i had wisdom teeth extracted, was told not to eat spicy, hot foods so the second day we go to a friend's for dinner and all the food is extremely hot and spicy. after 24 hours of bland liquid i was ready for real food and loved the spice. it really soothed the pain. so thats all i ate for the remainder of the time. unusual for me since our normal food varies in the spice level.

Wanted to chime in with the bagging idea. When i buy liquids to bring home, usually olive oils, jams, honeys, i also buy souvenir totes. I look for cheap touristy stuff into which i pack my liquids wrapped securely in clothes. if its tightly packed and doesnt move around, usually comes home intact.

Do they let you take yogurt through > TSA in miami made me throw away my yogurt saying it was not allowed. i had to throw an icecream cone that i bought at the icecream place across from TSA at san diego airport. i wanted to bring back some goat cheese from a farmer's market in waimea but did not dare. takes me back to pre 9/11 days when i brought back beluga caviar from dubai.

Last year, returning from india, I had biscuits in my luggage. I declared them and they gave me a hard time. The immigration chap acted like it was contraband. Quite irritating but I think its because I usually look guilty and can never lie with a straight face. My DH on the other hand can bring in 'anything' without a problem. never gets asked or checked.
Are there threads u stay away from
rudeness and aggression deter me. i feel attacked so many times that now i am ultra careful of even offering information. the comebacks are sometimes superfluous. we are all entitled to our opinions and discussions can be interesting without rudeness.
What to do with lamb liver?
Boil till done. It doesnt take too long. After cooling, slice into matchsticks. In a blender mix yogurt, cilantro, garlic and cumin seeds with salt. Add the cooled matchsticks to this and enjoy as a side.
