Ask Sushi Man

Hi, Sushi Man! I am just now starting to read this thread (because you reminded me on Facebook - see if you can guess who I am!) and I am looking forward to it based on reading your first post - nothing to my mind is less appealing than warm sushi rice! This is a strange phenomenon that I can only remember happening ten or so years ago with certain perceived "in" restaurants, none of which appeal to me. My first question I can think of: how long at room temperature is sushi rice good for? 1 hour? Cheers, Pigeage

Zucchini blossoms?

So I take this to be a no... Nobody has any regular source for blossoms. I can grow them, certainly, but that doesn't supply them to me on demand. Thanks anyway, Pigeage

Beef Neck Bones?

Hi Tom. I use them a few times a year, usually, to make beef stock and beef consumme (a right pain in the @ss). I need meaty parts, not bare bones like they have for the hounds (and what a world that this is so hard to find, am I right?) I appreciate all your imput and I'm not gonna give up. Beef Neck Bones?

Hi "hounds... anyone know where I might score a couple of pounds of meaty beef neck? Whole Foods says no, ditto Fresh Market - they don't break down anything but the cryo primals they receive... I am in Cary but would travel. Thanks for any recs & mangia bene!

Wow! Great photos! I'm gonna have to hit that this coming weekend. I moved here from L.A. and my kingdom for a snow bun or an XLB! (Hmm... just checked the menu they have neither. Maybe I can ask the chef to whip some up - xiao long bao (steamed soup dumplings filled with pork broth) are the BEST! Thanks for this post, I'm excited!

Hiya, 'Hounds - Got any rec's for great markets in the Triangle? Not farmer's markets, I think I have them wired, finally (and I like West Wake) but bricks and mortar joints. Been to the big Asian market in Cary, was pleased (not with the sanitation or off smells, but still). Thanks!

It sounds to me like you'll staying on the UWS - if so ditch Good Enough to Ead (it isn't) and instead go to an institution - Barney Greengrass on Amsterdam. They have the best french toast in the city . . . and I've never ordered it, I only sneak bites, I'm always too busy making with the fish breakfast . . . Have a great trip, and Patsy's is my number one pizza place in the world. And I'm originally from New Haven, CT. P.S. - Barney GG is cash only on weekends, and the line can get hectic after 10AM or so.

Milano's Sweet Pancetta - where in NYC is it FROM?

Hi 'Hounds - Hoping one of you knows the source for one of my favorite new finds. I recently bought some Milano's sweet pancetta from Murray's Cheese in the Central Market at GCS - a Google search for "milano's sweet pancetta NYC" turns up nada. Not that I don't want to patronize Murray's but does anyone have the 411 on whose this is and who makes it? All the Murray's label will reveal is that the pancetta is "made right here in NYC" (and I can't blame them for being secretive - it is a fine product). I did a side by side with some pancetta from Salumi - Batali's dad's joint that I order from in Seattle - and to my palate there is no comparison (with due respect). Cheers, P.

Top 5 Most Overrated in Manhattan

The rye in L.A. (Langer's, Nate & Al's) is corn rye, a different rye experience IMHO. The meat - that's a toughie. Katz's is MY personal favorite, but I love Langer's, Carnegie, even Artie's on the UWS, (that last just to get the heat from whomever out there ;-) ) . . . A quality corned beef or pastrami on a couple of nice pieces of rye with some great deli mustard . . . that's a treat (east, west, or even north - I love smoked meat sammies in Montreal), and best in this category is similar to saying you like Granny Smith apples over Golden Delicious - a matter of opionion. But can you be RIGHT? Best we can determine would be: 1) which is most popular. 2) whose standards are slipping or holding or (God forbid) improving. But it's fun to discuss, absolutely. And BTW - Nate & Al's in Beverly Hills makes the best chopped liver app. Go ahead, tell me I'm wrong! ;-)
