My husband and I used to be very up on the Manhattan restaurant scene... until we had a twin boy and girl last year. His birthday is next month and I'd like to surprise him with a reservation at a hot, new restaurant--except I have absolutely no idea what's going on out there! In the past we've gone to Scarpetta, Degustation, EMP, places of that nature for his birthday, if that helps you narrow down any recommendations. Thank you in advance!

Fresh pasta SOS
My husband was in the middle of making sheets of pasta when he had to run off and do an errand. The dough is only supposed to rest for 15 minutes. Would I be better off sticking it in the fridge, or leaving it on the counter until he gets back? Could be four or five hours, and I'm grossed out by the idea of anything with eggs sitting out that long... Thanks in advance!

That sounds great--will try your rub next time! This one is very simple because it's served with several different sauces (ginger/scallion, kimchee puree, and a miso-type paste). You pull the pork and pile it into lettuce leaves with steamed rice and choice of sauces, then top with a fresh cold oyster!

It's rubbed with salt and sugar, supposed to be roasted uncovered. After reading your very interesting post, I'm thinking of trying 275, then checking with the thermometer after 5 hours until it reaches 200 internal. Does that make sense?

Boston Pork Butt question--help!
I'm making a recipe tomorrow that calls for roasting a 8-10 pound pork butt in the oven at 300 degrees for six hours, until it's falling off the bone and fork tender. However, the biggest roast I could find was a shade under 5 pounds, and poking around the internet I've also seen arguments for roasting this cut at a lower temp (200 to 275) for longer time. Does anyone have any guidelines or rules of thumb for me? Thanks in advance!

Wow, Aggie, thank you--that's exactly what I needed! Original recipe called for 50 minutes and I was guessing an extra 10 minutes, but your strategy is great. It's a very moist batter, with all the grated zucchini, so it'll be interesting to see. Will report back!

it's only a third of a cup; i guess i can't go that wrong with vermouth or marsala. oh, and i just tasted the cooking sherry and it is so salty i almost spit it across the room! so that's out. (down the drain, actually.)

My recipe for tonight calls for medium-dry sherry, and I just realized that all I have is an unopened bottle of cooking sherry. If you were me, would you:
1. substitute marsala, ruby port, or dry vermouth (which one of these is the closest?)
2. go ahead and use the cooking sherry
3. suck it up and go buy the real thing.

Am I missing someplace (besides Bern's) that is really "Tampa"? I feel like there are plenty of good high-end Italian joints here in Manhattan; I guess that's why I keep coming back to the idea of fish, because of the beach!

I will be in Tampa for my husband's birthday next month, staying at the Grand Hyatt. After reading many helpful posts on this board, I'm considering the following restaurants for our dinner:

Pelagia
Mise En Place
Six Tables
Oystercatchers (though I'd rather not stick around the hotel)
My husband loves both steak and fish, so those were my first thoughts. Plus, I'm not the world's best driver, so something reasonably close to the hotel or easy to get to would be nice. I'd be grateful for any votes on this list or new suggestions--my goal is a memorable meal that we couldn't get in New York City. Thanks in advance!
