Thanks for the lead. My understanding of vinegar mothers is pretty rudimentary. Among other websites, www.gangofpour.com has some useful info on making your own vinegar. From their site and a few others (and James Peterson's "Glorious French Food") I have just learned that the red wine vinegar requires a "particular" mother. Not sure why.

SF Brewmaster and the two online catalogs I found are out of red wine vinegar mother. (Apparently, their common supplier has suspended refilling orders while they deal with a problem with the strength of their mothers.) I live in SF and am looking for leads on how else to obtain a mother so that I can start fermenting my own. Suggestions and guidance are welcome. Thanks.

p.s.I am looking for a mother specific to red wine, which I understand is different from the mother found in Bragg's natural vinegar.
