Soft Shell Crab in Brooklyn?

They have them on special at Petite Crevette on Hicks in Carroll Gardens for appetizer (1 for $7) and entree (3 for $20 I think). Comes with greens and frites. Very tasty, but I am not experienced enough to say if they are the best.

Etiquette on sending back sushi?

I went to a new sushi place last night and ordered the sashimi deluxe. The waitress came back with sushi deluxe. I've never heard of someone sending back sushi. I didn't want to offend the chefs, who were five feet away. And I figured had I returned it, they would just peel the fish off of the rice and send it back out to me. So I ate it, no big deal. But for future reference, is it okay to send back sushi because of the waitress's mistake?

What does three and five ply stainless steel mean? How do they stack up against a regular 18/10 stainless steel item?

You have to hard boil your eggs properly. Doing it right won't cause that sulfur smell. You are probably overcooking them. Put eggs in pot and barely cover with water. Bring to a boil and take pot off of burner and cover. Let sit for maximum 20 minutes. Then cool the eggs in ice water.

Vinegar neutralizes the smell. Put a small bowl of white vinegar next to your stove.

What "Asian" cuisine to start with?

I disagree. I grew up on authentic, homecooked Vietnamese food and it takes almost the whole day prepare. Unless you are talking about basic stuff like spring rolls or rice noodle salads. Also, I do hear good things about the cookbook "Into the Vietnamese Kitchen". I think basic Chinese is the easiest as there are so many Americanized Chinese recipes out there already (cold sesame noodles, stir-fry, hot and sour soup). Japanese cuisine isn't that difficult, either. Though they treat their cooking as a tradition and artform that shouldn't be bastardized.

I've been to a Teavana in a mall and was thoroughly confused by it. I saw they had cut-outs of bubble tea (my favorite) and when in, they didn't have a real menu and I saw no signs of bubble tea. Am I just stupid or is that place hard to navigate for first timers?

Paring knives

It helps, doesn't it?. What do you use, just a chef's knife? Hack away with a clever? My mom would always use a large, heavy chef's knife. But this knife skills book I speak of ("Knife Skills Illustrated" by Peter Hertzman) says to use a paring knife for most of the job. So any advice would be appreciated.

Thanks for advice. I consulted this knife skills book I have and that dude says the shorter the better. And the straighter the blade the better. After much research and debate, I settled on a Global 3 1/2" (GS-38, the "Western-style" one), on sale for $40. I can't wait to get it and test it out and break down a chicken.

I am constantly using the chopper attachment for salad dressings, but never had a problem. I'm sorry to hear that you did. Did you put yours through a dishwasher? Maybe we have different models because I've never had a problem with mine (I've had it for three years and haven't had a problem aside from the fact that one of the blades broke off the other week, but I found a replacement part for $6).

What's the bread like? Because I love authentic baguettes and fresh bread loaves from Whole Foods. But I'm not going to go to a restaurant based on bread. I'm a girl that enjoys Legal Seafood or Panera or the drive to Waterzooi or nothing (I won't even take free samples from the food court).

Where I live, the tap water is overly chlorinated. It tastes awful. Anytime they think there's a contamination they just dump more chlorine in the water supply. And you know what I think? Toothpaste=flouride. Genetics=cavities for me. And cavities aren't the worst thing in the world.

Don't waste your money on that food processor! If you don't already have one, go with a reliable one like the Cuisinart Pro Classic. And I tried it tonight and it didn't do anything to my toasted spice mix (with cinnamon sticks). I normally use my Braun Multiquick for grinding spices and it's a tri-tasker for $30!
