Detroit-style onion bagels - how to make them?

I grew up in the metro Detroit area and was spoiled by the excellent bagels there - dense, chewy interior, crunchy - I mean CRUNCHY - exteriors, and reasonable size, not enormous pillows.

These issues I have seen discussed elsewhere. However there is one major issue that I have not heard anyone else discuss but which is of critical importance. The makeup of the ONION BAGEL.

In New York, where I now live, an "onion bagel" is some kind of horrid mess, essentially a plain bagel coated on the outside with tarry, burned bits of onion. Gross. I'm not sure how people can eat these at all.

A proper onion bagel from my youth is an onion FLAVORED dough. The bagel itself in other words is onion-y with no discernible bits of onion in (or God forbid, ON) it.

I'm wondering how these are made actually? Is it perhaps using Onion flour or onion powder?

Looking around the web everyone seems to have great things to say about Henry Westphal & Co for knife sharpening.

However I can't seem to find anything about their hours - are they open on weekends? Also they seem to have moved between 25th st and 30th st but I can't quite tell when or which is the current location - can anyone update us with the latest?

Tehuitzingo - grocery?

Reading the boards, I see a lot of posts about the taco stand in the back of Tehuitzingo but I'm wondering if I can actually pick up good Mexican groceries - nice tortillas, pickled onions, achiote, etc - there as well? Or is it really just your average bodega?

A related point; where in Manhattan can I get good fresh tortillas? I like the small kind for making tacos, dont really care if they are corn or flour, just want fresh and tasty ones!

Simple Syrup problem underway as we speak

First, a question of proportions. Alton Brown says 2:1 sugar to water which sounds crazy. Other sites say as much as 3:1 in the other direction.

I tried the Alton way and it was about as thick as, say, marmalade. And as soon as I stirred it, the whole thing crystallized out and I had a pan full of hard candy. I then added a bunch more h2o, re-heated it all, and now it's looking okay, but I'm not sure how long I'll need to let it cool, if there's anything I can do to speed the cooling process (drop in an ice cube or 2?), or whether this batch too will end up cooling into rock candy. Thoughts/advice welcome!!

Yep, after a bit of thought I chucked em. Was hoping to finish preparing tomorrow's brunch tonight (fritata), but no such luck. Off to the market in the morning for some fresh eggs.

Thanks... I think it's probably been a couple months. Honestly I don't know :-)

So I cracked them into a bowl and whipped it up. I'd say there's a *slight* off smell to them, something like the smell of the inside of a raw chicken carcass. Not so strong that they're clearly bad, but when I lean my face down into the bowl and take a whiff, it does have a smell like chicken carcass, which is not something I ever noticed in raw eggs before.

Safe? Unsafe?

How long will eggs last in the fridge?

I've had some eggs in the fridge for quite awhile. Do eggs go bad if kept in the fridge? If so how can I tell? When I crack them open will they look or smell bad?

For the avoidance of doubt, I am talking about whole, uncracked, chicken eggs still in the carton, not cooked eggs.

Grand Sichuan - Aui Zhou chicken?

I've seen a number of posters here and elsewhere sing the praises of this dish. I have a couple questions:

1. What is it? Can you describe what the dish is like?
2. How is it pronounced? Just close enough to order it is okay. I would say something like "OW-ee zhow"? I just want to make sure they understand what I mean when I call to order it.
3. Any contrary opinions that it's awesome? So far everyone who's mentioned it raves about it... does anyone not like it, and if so what about it don't you like?

Fries - Robuchon method

Anyone tried this one? I'm very skeptical....

For those who have not heard, it's rumored that his method is to put the fries (no thicker than 3/8") in a pan, cover with room temp oil, and heat until the fries are crispy.

This seems almost magical and defies everything I know about frying.

Most Reliable Restaurant Review Site Outside of Chowhound?

New York magazine has, IMO, the best restaurant reviews (and food section overall) of the mainstream media's online properties. Their reviews tend to be excellent and reliable.

Also the New Yorker writes nice reviews, but at one per month and not much online presence, I use it more opportunistically; meaning I'll go somewhere that I read about in the New Yorker, but not use it as a resource to read about a place I want to try.
