Raspberry birthday dessert

We will be getting together for my MIL's bday to go out for brunch, followed by dessert at our place.

She primarily likes fruit-based desserts and doesn't care for chocolate (crazy, I can't believe she is my husband's mother!). Last year I made a pavlova that was very well received, but I was hoping to do something different. Dessert is for 6 adults and 2 children and they will want to put candles in it. Any ideas or suggestions appreciated!

I have certainly made the base one day in advance, but haven't tried longer. I imagine the flavors would have more of a chance to meld.

Jenni's Splendid doesn't use eggs and the recipe for her base is on Saveur.com. I most recently made buttered popcorn ice cream using her base and I loved it. I have also made her sweet corn with blackberry sauce ice cream.

How far in advance are you considering making this ice cream? I find that homemade ice cream gets pretty icy after 2 days.

I would like to make cinnamon rolls for an small event tomorrow morning, though I do not want to get up at 5am to work on them. Can I do the initial rise tonight, and form them, etc and then refrigerate them overnight, while doing the second rise in the morning before I bake them?

Thanks. I should have been clear that the jeans would be for my husband. We are eating lunch at Le Bernardin earlier that day and he was hoping to throw on jeans for the rest of the day but could easily add a sport coat. I myself don't mind multiple wardrobe changes throughout the day as much.

Dress at 15 East

Are dress jeans acceptable in the evening? I currently have a reservation for Nobu 57 (I was heavily influenced by reading here about their desserts) but I am starting to rethink that as it will most likely be our only sushi meal while in NYC this visit. I am strongly considering 15 East but was hoping to dress a bit more casual.

On a side note, would it be feasible to have dessert only at Nobu 57 during their lunch service?

Pumpkin pie using fresh ginger

I need to bake a pumpkin pie and I'm out of ground ginger. I have no time to wait for a delivery from Penzey's and would rather not buy another brand. Has anyone used fresh grated ginger in a pumpkin pie?

Can the CI's vodka pie crust be made with all butter?

Yes, using the vodka. I have been using a pastry blender on my all butter crust as I am nervous about over working the dough, but I will follow the CI recipe just swapping butter for shortening.

I would rather not use shortening, has anyone tried it using all butter? I would be willing to seek out leaf lard but not sure I could get it in time. I have been making all butter crusts with inconsistent results using the following proportions:

2 1/2 cups flour
1 tablespoon sugar
1 teaspoon salt
2 sticks very cold unsalted butter

Recruiting All Ideas for Cheap Homemade Dinners!

Lots of good ideas here already. I would add pork shoulder as well. If you have a crock pot you can put it on top of a bed of sliced onions, pour water or beer over and cook on low until shreddable. From there you can add sauce for pulled pork sandwiches or use it as a filling with beans and rice for burritos, etc.

Can frozen egg whites make a decent meringue?

So I tried it, I have my egg whites stored in the freezer and can't remember how many but I plan on weighing them before using. The recipe I am making requires only 2 whites. Do I thaw the whole batch and refreeze? Or how do I thaw just enough for what I need?

I am wondering if I can substitute buttermilk for the milk in the recipe. It calls for 2t of baking powder, but no soda. Will this be a flop if I use the buttermilk? I almost always have buttermilk and heavy cream on hand, but almost never have milk.

Brunch near Agganis Arena

We have a party of 8 going to the Cirque du Soleil at the Agganis next month. It is a 5pm show on a Sunday, and we are looking to eat nearby beforehand, I am thinking around 2:30pm. It seems that we'll be largely stuck with brunch menus but bc it is later in the afternoon I want to make sure there are sandwich/entree options for those of us who probably ate eggs and such about 5 hours earlier! I was originally thinking of ICOB but the menu seems a bit limited. Any other ideas?

Cooking From The Farmer's Markets . . . what's on your table these days?

It was raining and a little cooler here yesterday (Boston) and was perfect weather for eggplant rollatini. Breaded and baked strips of eggplant stuffed with basil and cheeses topped with fresh tomato sauce. Served with arugula salad.

Tonight is charred corn tacos with zucchini-radish slaw with a tomato arugula salad and black beans.

I have a ton of basil right now and will make pesto and freeze.

Reporting back. I was careful not to overbeat and baked it significantly longer until only a small circle in the center was wobbly. It was a great success!! I think this will become my go-to plain cheesecake recipe. Thanks everyone!!

Quinoa

I usually cook it as I do rice, though I made quinoa stuffed peppers the other day. I cooked the quinoa per the package instructions and added to sauteed farmers market vegetables and stuffed peppers, topped with feta. I also love any leftover quinoa cold on a salad to make it more substantial.

I used four eggs, so I can't imagine it was the amount of eggs that was the problem. As I said, I loved the flavor and have tons of cream cheese on my hands right now so I am going to try the cake again tonight. I will take care to not overbeat and bake to 150 degrees. Any other suggestions? I have baked tons of cheesecakes before, but never before with a mixer and never with such "messy" results.
