Pancake Tricks?
I add either vanilla extract or powder (powder's better for this, but I don't always have it) it tends to cut any "doughy" flavor you might have, and it just enhances the flavor. I also put a little extract in the syrup, which again gives it a fuller, richer flavor. Try it and enjoy!

One Steven of Stevens' should be ashamed. Coming from Carlucci, he should know better than to try and pass off sirloin as tenderloin, my friend (a butcher) was apalled, as was I! Ordered a $90 bottle of red which was served to us colder than a white should be. Lucky the martinis were good and big, or we would have nothing good to say about this disappointment!

no such thing as pure clear vanilla extract (can't take the brown out of the bean!) pure vanilla powder works great though and doesn't darken color www.bakerscatalog.com
Replacements for almond extract?
for the future, www.bakerscatalog.com carries a whole line of pure extracts (including almond) that are mostly allergen free. also allergic to nuts, i use their almond extract which does not contain nut allergens.

where overseas? i've been able to find nielsen massey at www.lakeland.co.uk and a store out of madrid called "taste of the americas" or "taste of america". i'd be wary of any vanilla product that is white (pure vanilla powder will still have an off-white color), but powder is used the same proportion as extract.
Vanilla Extract
be careful with mexico, they don't have the same regulations as in the states for labelling ingredients. they can also get away with using a cancer causing carcinogen (cumerin) in much of their vanilla. it gives a cocoa butter smell and taste. also, even if it says pure vanilla extract, it can still be imitation.
Vanilla Paste
A great place I found to answer any questions about vanilla in general was on the website of my favorite - Nielsen Massey. I emailed them several different times, and got great suggestions, usually from a Nielsen. Gayle Gand (famous pastry chef) told me the BEST is Nielsen Massey - she also has a new cookbook out "Chocolate and Vanilla".
