Good luck with that! FIBs food cart on Memorial Library Mall (campus end of State St.) is the most frequently cited place for italian beef. There's one on the menu at JB's Italian Grille ( http://www.jbsitaliangrille.com/ ) in Sun Prairie.

Milio's is certainly decent and cost-effective (and identical to Jimmy John's, pretty much.) But you won't find sides there. Some more ideas:

Check out what the REAP Food Group is up to: http://www.reapfoodgroup.org/ . Their Farm Fresh Atlas lists markets, producers (including pick-your-own) and CSAs; they also host events like the upcoming Food for Thought Festival, Sept. 20.
As for good stuff near Cambridge or Lake MIlls, I haven't uncovered any hidden gems there (tho Cafe Carpe in Fort Atkinson was nice, rustic, and folksy/artsy). It's been said the best fried cheese curds in the area can be found at the Door Creek Golf Course Restaurant on the far east side of Madison: http://www.doorcreekgolfcourse.com/ and so far I'm inclined to agree.

Market Manager, Larry Johnson says that asparagus, morel mushrooms and rhubarb will be available at market this Saturday. It is not the peak of production but the supply will be very reasonable.

Where to eat near U-Madison?
Generally, WYSIWYG. That is, places on State St and points west near the U can be taken at face value - no hidden gems. If you're willing to walk as far as the Capitol Square, Cafe Soleil:

Bakery in Madison, WI (West Side prefered)
Mmm... I find a lot of good bakery at the farmer's market. But for everyday sweets, I like Lane's a lot. Carl's Cakes has a great carrot cake and a nice lemon poppyseed with raspberry. Of course, donuts from People's on E Wash or Greenbush. Wheat sourdough from Clasen's makes killer toast. Just had a nice lunch on thick homemade bread from Lakeview in the Hotel Ruby Marie. And for a great time with tongs, there's La Concha... dang, now I'm hungry!

Admiralty Restaurant at Edgewater, Madison?
Right on. We went in 2004 and it was still very proper. Can't say the staff took the edge off the stuffiness, though. It might be the only place in town to get bananas Foster.

Where do you eat in Madison, WI?

For weirdness, even though it's technically a few minutes southwest in Verona, you can't beat ChinMi. Three words: truck stop sushi.
There have been numerous Madtown threads on Chowhound, too - just search "madison wi" and thre are more recs than you can shake a stick at.

Madison dinner before theatre
Depends what you like, but I've heard nothing but good things about Old Fashioned for comfort food WI style. For something less heavy (on the plate, not on the wallet) there's Fresco, right in Overture. Or for something about as stylish but not quite as skilled, there's Crave (good drinks, OK food).
Wherever you go, it would be fun to hear how it turned out!

Madison WI pizza - where do I go?
If you're looking for really good wood-fired pizzas, try Cafe Porta Alba (Neapolitan-style) or Greenbush Bar. For just your standard pie done well, go for Glass Nickel.
I hope those aren't the places you've tried already... :)
