So Far I've Made (from Thanksgiving leftovers):

Made some cinnamon roll dough, and filled with the leftover cranberry-wine sauce. Rolled up, placed in pan as a ring rather than slicing into individual rolls. Put an orange glaze on top after baking. Yum!!

Thanksgiving side: Not heavy, possibly acidic or citrusy?

Hi all,

Planning the big meal here. So many of the traditional components are heavy, rich and/or creamy. I'm looking for something to serve (vegetarian) that will be a good complement. My thoughts are something crisp, acidic or citrusy, and light.. Maybe containing raw vegetables instead of cooked, or some form of fruit?

V and V what's for dinner, autumnal edition

The last few dinners before our kitchen became unusable last night (putting in new flooring):

Cheese and spinach lasagna
Fake sausage and mushroom stuffed acorn squash
French Onion soup- I use lots of wine and some unbeef bouillion (mushroom stock works really well too!)

Tonight it's Chinese takeout. Sesame tofu, yum!

All summer vegetables from the market last night- corn on the cob, best we've had all year; new potatoes with dill and butter, and a caprese salad. So good!!!

Pasta salad with everything I could find in the fridge: tomato, cucumber, peas, green onion, carrot, olives, artichoke hearts, mozzarella cubes, fresh sweet corn, and dressed with pesto and mayo.

Got some beets at the farmers market, so tonight will be beet salad- sliced beets, goat cheese, romaine lettuce, and a honey balsamic vinaigrette.

An enormous salad! Butter lettuce, carrots, radish, tomatoes, cucumber, olives, blue cheese crumbles, beets. When we have salad for dinner I make them in smallish mixing bowls. :-)

How has high altitude affected your cooking/baking and what was your remedy?

Eggs- make sure you are using older eggs, and remember that the higher you get, the lower temperature water will boil at. So you'll need to cook them slightly longer.

Mac- again with the boiling. Keep it low.

Recent cooking fails?

Made the chickpea cutlets from Veganomicon, but had two bags of flour- one was vital wheat gluten, one was just plain- and they got mixed up. So my cutlets were not chewy at all, just doughy and bleh.
