Camping Recipes

If you camp infrequently, sure! But if you're one like me that's out every weekend in summer and fall, plus part of spring, then no. Good food all the way.

baking time question

I'm baking a carrot cake. Instead of baking it in two 8" rounds for 45-50 minutes, I'm using a 9x13. How should I adjust the time?

A vegan faux oyster

Except that jello/gelatin isn't even vegetarian....

Banana "ice cream" method questions

Peel bananas. Cut into 1" chunks. freeze. Throw into food processor, along with any flavoring you like, plus a bit of liquid (soy milk, cream, whatever). Comes out like banana soft serve. You could throw it back into the freezer after to get a more scoopable consistency- no need for an ice cream maker at all.

Ice Cream made from only heavy cream?

I'm lactose intolerant, and want ice cream! Heavy cream, being mostly just the fat, doesn't seem to bother me so much. Can I make ice cream using just that instead of a mix of that and milk? I can't find a recipe. What about a mixture of heavy cream and coconut milk?

Expert jam troubleshooting help needed

Well, you'll need to re-cook the jelly- add some pectin to ensure gel. Then re-process your jars.

Summer canning quandaries...post your problems and solutions here!

You can't fit 6 jars into your canning pot? Here's the easiest way, if so. Sterilize jars, lids, etc in dishwasher. Prepare jam, fill jars. Process your first three jars, then as soon as you pull them out, pop the other three in- that way you don't have to heat the water a 2nd time (not sure why you would cool it down.)

What's for dinner? Part 89 [OLD]

Last night, a green salad with bleu cheese and an artichoke, steamed, with a garlic-dill mayo for dipping.

Tonight- mandarin-orange 'chicken' with stir-fry veg.

I'm also throwing a loaf of bread in the machine, for Sunday's french toast.

can I make a white sauce with soy milk

Of course, just make sure to use unflavored unsweetened!

Easter Menus, y'all!

So I have been informed:

Ham

Mashed Potatoes and Extremely Salty Gravy
Green Salad
Rolls

I get to bring something to go with, something vegetarian. Probably some sort of vegetable side? (No asparagus or mushrooms).

Glenwood Springs Restaurant Recommendations?

Too late, but if you come back- The Rivers is one of the best restaurants around. High-end food but not at Aspen prices. They're even running a prix-fixe menu right now which is a fantastic deal.

Glenwood Springs Restaurant Recommendations?

Really? The beer is great, but the food is all frozen, probably sysco. They serve super-pretzels (yes like you buy at the grocery store) and their "southwestern ravioli" is frozen cheese ravioli in canned enchilada sauce.

how can I transform this?

Thanks! I did this, used sriracha instead of cayenne, more garlic, and some smoked gouda and more cheddar. Helped tons. Even went back for seconds!

how can I transform this?

I made cauliflower soup last night, and it was very meh, despite adding more salt, more pepper, more cheese.

Ingredients were:
onion
garlic
cauliflower
salt
pepper
milk
white cheddar

And I've got quite a lot left. So how can I transform this soup into something more delicious?

Please keep it vegetarian.

Thanks!
