Pig Ears
I need to get my hands on some pig ears in a hurry. Gonna check Fiesta, but does anyone know of any places that regularly carry them? (Fresh, not pickled) Eventually I will try to source them from the farmer's market, but I can't wait till the weekend this time around. Thanks in advance!

To clarify about the tuna, the tuna was cooked perfectly. Just barely seared and rare in the middle. Just that the seasoning and preparation didn't have the same assertive flavors that the other dishes had.

FWIW, I have had the duck fat fries on two different occasions and they were crispy both times. Also very delicious with just the 110 minute egg on top. I didn't even need to use the bearnaise. It's a shame they weren't up to snuff when you went. I agree about the smashed potatoes with the chicken neck gravy, they were one of my favorites. I also enjoyed the roasted beet salad with goat cheese and pistachio vinagrette, and I liked the salmon pastrami. To me, the star of the menu is the brussel sprouts which I thought were comparable to Uchiko's fantastic brussel sprouts. These ones are also flash fried and drizzled with a little agave nectar and meyer lemon juice and then tossed with golden raisins and pecorino romano. We ended up getting another order. The weakest dish we had was the chile rubbed tuna. To me that was dull, when I was expecting a flavor punch along with some nice rare ahi tuna, but that wasn't what happened.

I went for lunch on opening day. It's as good as I remember it being when I would visit friends in College Station. I had the Earl's sandwich (Roast Beef) and it was very good, as was the cookie I got. Seemed a little pricier than I remember. But very good.

I'll have to go and do a taste test. I have never had their brisket. I always get the clod and sausage. I do know that both Kreuz's and Smitty's smoke their meat at a higher temperature (> 400 degrees) because that's how they cook their shoulder clods, which are chuck as opposed to brisket and weigh upwards of 40 lbs. My guess is that any brisket cooked that way is gonna be dry, but I have always been pretty happy with the clod at Smitty's.

This is a random question, but did you specifically request brisket at Smitty's and Kreuz's? The reason why I ask is because Kreuz's and Smitty's are two of a handful of places that I know that cook shoulder clod and are known for that, not their brisket. Personally, I have found that I vastly prefer Smitty's to Kreuz's.

Not sure where you would get it here. I had it in Mexico and it is interesting. It wasn't bad by any means, but I can see it being an acquired taste mostly due to the texture. Your best bet might be to make your own?

Yeah, Fruta Feliz is serving up some seriously good mexican food. Their salsas are great and even simple breakfast tacos like nopalitos con huevos and papas con huevos are raising the bar. Those fresh, handmade corn tortillas are killer.

That is the one ingredient I have never been able to figure out, but I believe it is key. I think it is some type of mushroom or preserved vegetable. It doesn't taste pickled in the vinegar sense, but maybe there was some lactic fermentation going on. Either way, that is the secret of those green beans, and I must find out what it is.
Killer week in Austin for Newbie
Sounds like a great itinerary. Three quick comments. Personally, I'd switch Olivia and Foreign and Domestic for Brunch and Dinner. But thats because I LOVE Olivia's brunch, and F&D's papardelle with truffle butter and a soft egg is sinfully good. Plus, then you can hit Tigress, Drink.Well, or Workhorse afterwards for a little digestif drinking. Secondly, on your last night if you are hitting the Elephant Room, consider heading upstairs to Swift's Attic (literally upstairs) for dinner, or at least some cocktails and snacks before searching out the food trucks. Also, I would switch out Frank with Easy Tiger, or consider Taco Deli + Houndstooth Coffee. No matter what though, you have a winner of a week there. Cheers!

They don't chop it up. They put it in a tortilla. The chile is stuffed with their Cochinita Pibil, and topped with pickled red onions. Its their Wednesday lunch special if i remember correctly, unless they have it on their regular menu all the time now.

I'm not sure if they make their own noodles. They do make their own broth. What you are talking about sounds amazing for $10. I still have a hard time getting over the fact that the Kuro Ton ramen is starting at $12.75, even though it is very good.

I am happy to report that Musashino has been paying attention to the upcoming ramen trend and has upped their game. They are now offering additional ramen offerings at lunch including a Kuro Ton Tonkatsu Ramen. They offer it with your choice of cha siu pork belly or with the BBQ Brisket that they serve in their other ramen. It was delicious and a much more traditional version than their other ramen that they serve with bean sprouts.
The broth was really really good. Rich, milky white with a deep pork taste and a hint of ginger. Probably the best tonkatsu broth I have had, including Kome, but I need to go back to Kome to reverify. The noodles still felt slightly overcooked, and the eggs were also a little over cooked for my taste , but I suspect it was because they were buried in the broth as opposed to resting on top, like I prefer. The cha siu pork belly was awesome. Tender, with just the right amount of fat.
My only complaint is that the price prevents it from being a regular lunch option, and relegates it to a "special occasion" or payday lunch. The Tonkatsu Ramen on it's own is $12.75, but the cha siu pork belly is an additional $3.00. This comes to a total of 17.05 with tax, which is just too steep for a frequent lunch option. But damn that broth is good. I can definitely see myself splurging every few weeks.
Try it out if you get a chance, I would love to know what others think.
***edit*** forgot to mention that the Tonkatsu ramen also has droplets mayu (black garlic oil) added to the broth which is really good.

I know Bola Pizza does catering for parties. They are usually at the Farmers Market at 4th and Guadalupe on Saturdays if you wanna try them out and talk to them. Good stuff!

Pricey, I am going to say $40 per person. The food is good, but not $40 per person good. I think you are partly paying for the ambience, which is definitely gorgeous, but you can find interior mexican dishes ala carte at other places in town for a fraction of the cost.

I believe so. I think the Alamo Drafthouse standardized their menus relatively recently so they should all have the shakes.

I don't think anything in Austin is as good at Niko Niko's, but I will say I have a soft spot for Milto's at 29th and Guadalupe. They have a damn good tzaziki sauce, and even though the Gyro is staight up Kronos meat log, it's tasty. Their greek salad is pretty good too although not nearly as good at Niko Niko's. Don't even get me started on Avgolemono.
