Ugh. It gets worse.

Before they delivered my grill, I called them up and told them to bring a [medium] big green egg too.

What am I going to do with all this stuff?

BTW, they delivered today, gorgeous stuff. Taught me how to use and take care of both grills. Took away my old piece o' junk.

Can you believe I didn't have a chance to try them out yet??? I can't wait!

For all of you who recommended Hollis Hill Hw, thank you thank you thank you! I just dropped $1000 (*ouch!*) on a Weber Genesis EP-320 with rotisserie, delivery/setup/removal of the ol' piece o junk. I was tempted by the Summit line with infrared, built-in smoker, and rotisserie. But hey, I had to draw the line. Larry was ever so knowledgeable, patient, helpful, believable. I bought it about 4:30 pm and when he said "what time tomorrow do you want it delivered?" I almost fell over!

I have a cool looking all stainless one I bought at a place called National Warehouse something or other that is no longer in business. Silly me. It was about $270 and lasted for 3 years. The coating on the cast iron grates blistered off immediately. I started having problems lighting and keeping it lit during the 2nd year. Now, year 3, it won't stay lit at all.

What I'm looking for is a decent selection. Lowes seems to have the best, but they don't have some of the interesting brands I've read about, and DO have some brands I can't find anything on. Maybe I'll get the Blue Ember fiesta but I'm worried about durability. If all that's going to go wrong is the computer stuff, I can live with that. I just want it to cook well and last.

Surely someplace other than Sears, Lowes and Home Depot sells grills, but I haven't found them. Mine died after 3 years.

There are zillions of them and they more or less look alike to me. For example, double bowl stainless steel sinks can range from a few hundred to a few thousand dollars. What is the difference? How do I compare? Thanks!

How do you cook the beef ribs? Are they less tender than pork? I'd rather use beef ribs if I have a choice.

How do you use coconut milk?

I haven't tried this yet, but use it instead (or mixed with) other milk to make Tres Leches. Bake a normal size white or yellow cake, mix together 1 can coconut milk, 1 can evaporated milk, and some regular milk, poke holes in the cake and pour milk mixture over it while still warm. Chill and serve with sweetened cream.

I think I might be getting confused, because in NY, where I come from, barbeque is a verb, and in the south, where I now live, it's a noun. I'm looking for help cooking the kind of ribs that are *not* covered in a tomato-vinegar sauce.

Are ribs (bone-in) supposed to be slow-cooked? In the oven, or broiler? Can they be cooked on a grill (as in "barbeque")? Should they be boiled first?

Lastly, is there a big difference in how one cooks beef ribs vs pork ribs?

I usually get better at anything I try by immitating people I think are good at it. So watch the Food Network, friends that are good cooks, etc.

I also Google "Cooking Tips" or something like that to find zillions of sites with words of wisdom.

I generally find that, for main courses, the key ingredients are onion, garlic, salt, pepper, butter, and lemon juice for about 80% of the recipes out there. Embellish with herbs, spices, green pepper, soy sauce, soup stock, and a zillion other things.

Some other words of wisdom: preheat ovens and pans, cook foods that are already brought to room temperature (unless instructed otherwise), learn knife skills.

There is so much to learn and so little time!

Yes. Rinse the canned peas, and make sure you have the sufficient amount. I am not sure how many cups of peas soaked dried peas makes.

I love the way tile counters look. Everyone cautions about the grout, but maybe there is a way to seal it.

When you use Marmoleum, does it look "classy?" The sample looked a little plastic-y to me. But I liked that it has a cork back and it seems **really** easy to install - just click the pieces together, no grout!

What can I do with saffron?

Maybe it's me, but I cannot *taste* saffron! I bought a teeny container of saffron from Spain. I soaked it in hot water, or added it crumbled. I added a little, I added a lot. It certainly turns everything yellow, but I detect absolutely no unique taste in my food. I bought some saffron from another source and have not tried it yet. But I don't **ever** remember tasting saffron. Is it me, or does anyone else have that problem?

I'm with you, Brooksie. I went to a "green" home remodeling store this weekend, and, funny thing -- almost all of the green stuff is **not** competitively priced. Icestone - $90-$150 sf installed, Paperstone, up to $250 sf installed (!) , recycled glass tiles $32.50/sq ft!!! I want something that looks tomorrow, but hey, I have budget limits. And for those prices, you do not get something that is the most durable, stain/scratch/heat resistent, low maintenance product on the market. It's just, well, green. I hope I'm not looking into these products too soon. Maybe next decade they will be better.

The reason I asked the question to begin with, because of "fashion." Country kitchens with the butcher-block countertop look are "so 1980s," and with shiney laminate deco cabinets are "so 90s." My thinking (and it's just my opinion) is that the Roman or Greek ruin/rock countertop will be "so early 2000s." As soon as all the stores start selling it (and believe me, so many tile and flooring stores -- they're filled end to end with terra cotta ruins looking tiles and granite counter tops), I think it's about to become "old fashioned."

Since I probably can only update my kitchen once, I want something that is at least going to look "so 2010s."

What is the oldest, most beat up pot or pan that you use frequently?

I bought a cast aluminum dutch oven with a tight fitting lid (along with other pots, pans, and lids) at a yard sale 30 years ago. I paid $1 for the box. I have yet to find anything better than that dutch oven, b/c you can cook on the stove or the oven, and nothing sticks. BTW, that same box came with 4 seasoned cast iron skillets.

Convection Ovens? Should I get one [Moved from Home Cooking board]

I bought a combo micro/convection oven at Penney's (half the price of other similar ones). I use it **all** the time, for everything but those things that are too big for it and must go in my regular over, or for broiling (which I didn't think the convection did that well). I used to have an appliance that was convection over only, and I loved that too. It's fun to watch the cake rise in the oven!
