Hospital Food----My how it's changed>>>For the better

I was recently in Barnes Hospital in St Louis after having a TIA. I think that its worth noting that I went to school there as Barnes Hospital/Wash U Med is a World Class Institution. The food was ABYSMAL! I had a bite of what I assumed were breakfast eggs just to see if I could hold them down.

If/when I need to be in hospital it won't be there!

Coconut charcoal in the Lou

California Pizza Kitchen got rid of my favorites

I don't order pizza at CPK - they put all kinds of good stuff on the 'za but they just don't come together. I also like the Cobb salad or I'll get the Waldorf salad with bacon.

What defines Kansas City and St. Louis styles of BBQ ribs?

Actually, St Louis style BBQ isn't ribs at all. St Louis Style BBQ is Pork Steaks - Sliced Pork Butt is cooked much as the OP described.

Cameraman is also correct as to what St Louis Style ribs are - how the spares are trimmed, NOT how they are cooked.

Fact is, St Louis is NOT a big BBQ city - KC and Memphis are though.

How Long do Knives Last?

If all my knives were to disappear, I would go to Sam's club and buy some of their white handled "Cook & Bakers" knives - inexpensive and GOOD. Alternatively I would go to Amazon and get black fibrox handled Victorinox knives. Again cheap and good.

Brisket: smoking and their cooking time in different types of smokers

Brisket is done when it is done. I neither cook by time nor temperature. My brisket is dodne when a temperature probe slides into the center of the flat like its going into butter.

I use a WSM on a kettle bottom with the vents wide open and a clay dish instead of the water pan. Takes about 5 hrs for a full size flat.

My Mama taught me that Jews keep kosher and do not eat bacon to remind them that they are different from the goyim. So eat pastrami

Looking for THAI in Olive St area of University City

We went and plan on going back.

I had 2 objectives - get some good food and learn more about Thai food. I certainly met the first objective but not the second. For the most part I didn't really know what I was eating other than it was tasty.

Imaging going to a Church food fair where many of the church ladies (in this case Thai, Buddhist, not facile with english, Ladies) bring in crock pots of their specialties, labeled in Thai and sometimes english. At the entrance we bought $20 of tickets - main courses were $4, wifey got a chicken-pepper stew (What she thought were noodles were actually peppers) and I got Red Curry Duck - and some other stuff. They had what I called "Thai Potstickers" fried dumplings filled with chicken & onion mixture with thai flavorings. We had leftover coupons which they would have cashed in but I thought it would be more fun to use the excess money to buy pot-stickers to go.

Wifey even ran into a Mom from her toddler story hour.

We enjoyed and will return.

Where to buy a nice Charcoal Grill?

The weber kettle comes in sizes from 12 to 36 inches diameter. The 36 incher is a HUGE thing. They have recently introduced a 26" model. I usually cook on an 18" unit - but sometimes on my 22.5" grill. Most folks find them big enough and they are extremely well respected.

As a BBQ person I am very glad that I tried them but I don't plan on buying another bag. I really prefer plain ripple chips. But they make a good avatar

Fructose is toxic - your thoughts?

Fructose is toxic????

I sure know what fructose is - one of the many C6H12O6 sugars - half of sucrose. What do you mean by TOXIC? The usual meaning of TOXIC is "will kill you in small amounts" Anyone that thinks fructose is toxic by that definition is crazy. In addition anyone that thinks fructose is metabolized as a fat must have flunked Biochemistry.

Ready to Cry--Brisket is Tough

My gosh, that's pretty much how I BBQ brisket - put it on the grill as it heats until the meat is about 160F, then put the brisket in a pan with about 1/2 bottle of Gates BBQ sauce, cover tightly w/ Texas Crutch, cook on the grill until the meat is fork tender. Then put the brisket on the grill to dry the outer surfaces.

Caroline, I would suggest that you season the chicken prior to sealing it in the bag, and when the chicken is ready I would put it on the grill for some char.

Chicken is basicly bland so I would try to add some taste

One night in Portland, where to eat seafood?

If the train is on time, I'lll arrive at Portland Union Station at about 6PM on Sunday, and I'll be leaving at noon on Monday. I'll be staying at the Residence Inn Portland Downtown/RiverPlace and I usually dress in jeans and flannel shirts

Self Checkout at Costco.

The Costco in Ballwin MO has self checkout lines that I love BUT if I have LARGE items like 50 pounds of dog food it cannot go thru the line and you need an employee to scan it, which defeats the whole idea of SCO lanes.

Fine Soul Food in the Lou

We went to Sweetie Pie;s on Manchester the other day - both wifey and I had the same thing - Smothered Pork Steaks, Mac & Cheese and Cabbage.

OMG those guys were so good, as was the homemade lemonade. We did have a difference of opinion on desert - wifey felt that the peach cobbler was just totally amazing, the best she ever had. I thought that the banana pudding was better than the cobbler. Such a strain on our marriage.

I did commit a major faux pas. Not surprisingly, in a soul food restaurant most of the staff and clientèle was black and I was wearing a T-shirt that said "I love my coon cat" with a picture of the cat.
