Chez Henri has been and is still, my favorite place to eat with my husband (and anyone else for that matter, but don't tell him). We started going there while dating, and we just went to celebrate our 2nd anniversary last Monday. We were a little worried because it was restaurant week, but we went anyway because we have never had a bad night there. Though it was busy we had excellent service, amazing cocktails, wine and food. Our waiter/bartender/sommelier was outstanding (former b-side bartender); attentive but let us enjoy our night. We had the foie appetizer, the cheese plate (5 cheeses, a touch too cold; we just waited for it to warm up a little), and two Cubans. It was an outstanding meal and the ambiance was spot on (as always). |

12/10/08 Sofra, Cambridge Report You are wrong. Sofra makes all it's flat breads except for the Mountain bread which is used for the Lamb Schwarma. It is grilled in the morning on the sajj, so that's why you haven't seen it being made. |

It sounds to me like you put one round of the dough on your work surface, put some filling in the middle of that round. Wash the edges of that circle with a little bit of water (the water will help with the next step). Then put another round of dough on top of your round with the topping. Press the edges of the circles together so that they form something like a round pillow. I hope that helps. |

Wine Key-Is there another name? Thanks everyone for the info and the links! Ah so wine puller is exactly what I'm looking for. Perhaps my husband made up the term wine key. He's a pretty creative person :) |

Wine Key-Is there another name? My husband is in the wine industry and he wants a really nice "wine key" for Christmas. I've looked on wineenthusiast.com, surlatable.com, etc.. and have not been able to find one. Is there another name for this thing? What I'm talking about is something like a corkscrew except it was two bars that jut out of the bottom of it and kind of "hug" the cork while you take it out of the bottle instead of piercing it like a corkscrew does. He already has one that is very simple, so I'm looking for something kind of fancy. Any insight would be greatly appreciated. |

I'm sitting here with very dry hands thinking that would be a great gift for me (a chef) :) Last Christmas I received as a gift some silpats; which I now can't live without. You can find them on amazon for under $20. I also like the nice wooden spoon suggestion. |

Funny when I went to culinary school we used Viking Mixers and I can tell you that we all HATED them. I would choose a KA over a Viking any day (and I'm an "expert" :) That being said, I'm spoiled because I use a Hobart daily. |

How to get the cookie off the cookie press I had the same problem last year. Are your cookie sheets nonstick? If I remember correctly, l ended up only getting the cookies to stick to a really old alluminum pan I had. All of my newer cookie sheets were too slick. |

I hope to hear of someone who's had it in the Boston area soon. Crazy thing is that when I lived in Napa, we could get it on tap at Billco's which was for better or for worst; a pretty aweful pool hall with amazing beer (that's why we went). |

Gramercy Tavern Gingerbread Cake--Stuck! With stickier cakes (like gingerbread) I've had luck putting the pan back in the oven for a minute or two and then flipping it out of the pan while it's still warm. A similar trick, is to pass the pan over your burner just to melt the sugars a bit, then turn the cake out. |

My two favorite pies are both from my mom. Her cherry pie was to die for. Unfortunately, we lost our cherry tree after the ice storm that hit Vermont a while back. She also makes a French Canadian pie that we call meat pie. It's a mixture of ground pork, beef (and maybe lamb), mashed potatoes and spices such as nutmeg. If anyone is interested I could try to find the recipe. We always eat it with dill pickles. It is so delicious. |

Favorite warm weather drinks (alcoholic and otherwise)? I had an arnold palmer there, and was so happy to see the barista reach over grab a lemon, cut it in half and squeeze the juice into my iced tea. A little bit of simple syrup, and it was amazing! |

I used to live in Napa. Some of my favorite breakfast places were: First Squeeze: They had an amazing open face english muffin with eggs, peppers, onions, jack cheese and a huge amout of avocado. My husband loved their eggs w/chorizo ABC: Great lemon ricotta pancakes. The cooked to order breakfast items are better than their baked goods. Model Bakery: Great egg and cheese on english muffin |

When I first moved to Boston, it took 3 weeks to get internet at my apartment. I spent a lot of time at Diesel then (drinking great coffee and surfing the net for a job). I really like the coffee there as well as the atmosphere. Thanks for posting about your amazing shot. I've only had the drip coffee, but I will try the espresso next time. |
