Did anyone make Bittman's pa jun from last week?

It's flour, eggs, oil, and water mixed for the batter and shreded carrots, squash, green onions and shrimp added.
Did anyone make Bittman's pa jun from last week?
I was excited to make this but I am having some trouble with this seemingly simple recipe.
My first pancake was way to thick, it browned nicely, but was raw in the middle, as you may have guessed. For the second pancake, I thinned the batter, and used much less, and added 2 tsp salt, because the sauce, while stong, wasn't doing it for me. This one was as thin as in the video, brown and approching black, but still tasted underdone in the middle. Try three: thin the batter even more, cook till nicely brown on high-med, cook on low for another 20 min. Same result as #2. How is this possible?
I'm so discouraged that I put away the other half of the batter. Who wants to cook 6 pancakes when they take 30 min each. Is this the way it is supposed to be? wet and floury on the inside, no matter how long you cook it?

Madison WI pizza - where do I go?
I moved here from NY last year and I have yet to find a good slice. Pizza di Roma on State is the closest approximation to east coast style but the crust is tasteless (among other offenses). It looks like the real thing, but it's not quite there. I'd be interested in your opinion of it.
Roman Candle and Glass Nickel aren't terrible, you just have to think of them in a separate category. If you start comparing them to east coast pizza you'll just end up depressed.

I've making pickles and that got me craving a cubano. Is there any place in Madison that sells a good one?

Speaking of PBS shows, what ever happened to Posh Nosh? It was such great food show parody. I saw it at 3:00 am one night and it was never shown again.

Go buy two sandwiches before you go to China Palace. The next day remove veggies and toast in the oven at 400F for a few minutes, put vegies and herbs back on - perfect for lunch.

I'd have to say, yeah, a bit inconsistent. I wonder if the chef with all the credentials is not there every night. The waitress we had last time was very unhelpful with suggestions. Do you remember the waiter's name? I think it was John or something, maybe I'll ask about him next time I go. He promised to pick out all the dished for us the next time, but maybe he doesn't work there anymore.
I never asked if they had dim sum, is that only a Cantonese thing?

Are you buying the yellow flour packet when you make banh xeo at home? It doesn't work right if you use too much egg.

The Angor Wat asian market in the China Palace strip mall area makes a banh mi-ish sandwich. My vietnamese bf approves, but asks them to hold the onions. If they would just toast the bread it would be really good. $2.50 a piece.

China Palace is the most interesting restaurant I've found since moving to Madison six months ago. I think I had the same waiter, he was really excited that we eat organ meats. He wasn't there the last time I went, sadly.
We liked the beef with maw appetizer and the thick rice noodles. We went two weeks ago and there was a beef tendon special. I had never had tendon before and it was fantastic.
