I make a strawberry poke cake using a strawberry cake mix and strawberry puree, with a whipped cream topping. mmm.

+1 on the cake mix doctor, I have one of her books, and the recipes I've tried are very tasty. especially her lemon blueberry bundt cake.
she has a lot of recipes on her website, IIRC, and does a e-newsletter that usually has recipes.

those convenience store bags of chex mix... as much as I swear I'm not going to buy it again, it's like a road trip addiction!

What did you have for breakfast today?

not very exciting, but tasty and satisfying breakfast this morning - a tortilla factory whole wheat flatbread, lightly toasted, egg substitute scrambled with some jimmy dean turkey sausage layered on the flatbread with a slice of soy cheese, as well as a big cuppa joe.

I sure do! that's why I'm perusing the NOLA board instead of working. what wouldn't I give for some crawfish etouffe or some hot beignets!

No potato substitutions in my kitchen... I tried subbing some of the potato with cauliflower once. went over like a lead balloon. blech. :)

Culinary adventures in St. Lucia

We'll be there in September - we walked from the market in to the Super J last year and I remember walking past a place with INCREDIBLE smells coming from it. Bet that was JJs! I can't wait to go "home" again - we will definitely go see Chef Juice. :)

Store Bought Lite / No Fat Salad Dressings

I stick with Ken's or Newman's for my dressings, and only buy the "lite" varieties. We prefer honey mustard, so i can't say for sure on the flavors you like. So far I haven't found a decent tasting lite 1000 Island. not that there are many on the market. I agree with fourunder that Ken's has a nice lite Caesar.

Ok, I amend it. I love salads... but with very specific veggies on them - tomato, onion, pre-cooked broccoli, avocado. I'm a very plain-salad kinda girl.

I have TMJ, so I can't eat raw carrots, celery, cauliflower or other super crunchy things, and I don't l ike the flavor of uncooked broccoli, zuchinni... so no crudite for me, thanks. :)

I've tried (mostly unsuccessfully) to get DH to enjoy more veggies just because he has a very limited list of what veggies he *will* eat. He's a good sport, he'll try things once or twice and then go back to his peas, corn, carrots... while I enjoy my roasted veggies of the week. :)

Sounds like you had a good time on St. Lucia! We stay at Windjammer also - and have been to Laurel's several times. Lately it seems she's on vacation when we are on the island so we haven't been in a while. Maybe this year. :)
We're going to have to look for JJs, it sounds great.
you know, we've been going to St Lucia for almost 15 years and have never been to Jump-up anywhere?!?! we keep saying "one of these years"... lol

We've really been enjoying their 2012 Anniversary blend while its available. Dh's fave is Maj Dickason tho. :)

Calorie listings at chains

I think they're great - I use them as a tool to make the best decisions I can when eating out. I a lifetime weight watchers member - still keeping track of what I eat - so it's nice to be able to look up the nutrition information and plan how the meail will fit in to my week. I've discovered some real gems this way. For instance the Spinach Salad at Bertuccis is delicious, low in calories and filling. paired with a glass of wine and a bowl of soup, it's a perfectly reasonable dinner out.

what were (are) your favorite bed time snacks?

The recent passing of my grandfather led us to a discussion of bedtime snacks we remember from summer visits to his farm. Some of our favorites - big bowls of ice cream, corn flakes with milk straight from the barn, and bowls of crushed saltine creackers with milk, eaten like cereal.

These days I have some fruit or popcorn with my hubby. Last night tho it was a cup of decaf and a chocolate cupcake in honor of my grandfather. :)

chik fil a has a very tasty bagel/egg sandwich - it's egg, cheese and fried chicken (spicy or not) on a multi-grain bagel. you can get a fruit cup instead of the hash browns.

as tasty as that sandwich is, I think the chicken minis are even better... but they have no redeeming value whatsoever. :)
