Where to find duck breasts in Calgary?
Bite and L'Epicerie both carry fresh Rougie duck breasts which is the best IMHO. Co-op carries frozen Brome Lake, as do many other places.

New DeVille Luxury Coffee location?
There appears to be a new DeVille location opening downtown on 1 ST SW, near 8th Ave. It's under construction but there's a sign in the window. Does anyone know when it's expected to open? They don't mention this location at all on their website.
Taste - 1st Street, Calgary
I was there the week after they opened. Everything was great, wine, service and food, especially the lamb riblets. My only complaint was the heat of the sun beating in the large west facing windows. I won't go back unless I know they have window coverings in place.

It is a fairly interesting and educational 2 hours on the chocolate making process with some chocolate sampling thrown in. I haven't decided whether the $40 would have been better spent on several of their amazing chocolate bars instead.

I saw red currents at the Calgary Farmer's market last weekend, the stall closest to the door by Innisfail Growers.

The Thai Beef Salad (Yam Neua) is phenominal. The waiter said it was one of his favorites last time we were there.

Another vote for L'Epicerie. The pork/hazelnut pate is my fav. The pork/prune is also delicious.

Like the OP I also like to experiment with mg techniques, went to Sole Graells in Barcelona specifically to buy the necessary ingredients. My experience at Pierre Gagnaire blew me away. It was an amazing meal in every regard, the highlight of a two-week gastronomic binge through France and Spain.

The dish consists of lobster wrapped in crepes in a carrot, ginger, butter sauce. The ginger is very subtle, it is primarily a butter sauce with sweet carrot undertones. I'm planning on serving this as the main course and need some wine recommendations. Thanks.

Similar to above but more buffet friendly, you could do braised Moroccan lamb or pork stew with rice or couscous on the side. The braised meat (shanks, shoulder, leg if using lamb) is best done a day or two in advance and reheated the day of, very easy and tasty.

We are very fortunate in Calgary to have a producer of such high quality chocolate. The Lindt comparison has been very entertaining.
