Demeyere vs All Clad vs Mauviel

I love that this post as started such a great discussion.

What are your thoughts on tin vs stainless steel. I had a crazy summer and never made the purchase :-(. I LOVE how amazing the tin looks, but after reading the 300+ replies, from what I understand, Tin is VERY expensive to retin and needs to be done after about 8-10 years. Is there a big difference in taste / cooking on tin vs the stainless steel finish?

What is the difference between the tin lining with Mauviel(or copper based) vs the copper - stainless steel?

Demeyere vs All Clad vs Mauviel

I was at Sur La Table and they said that the Mauviel line is magnetic and should be able to do induction. I am not so sure about that. I like the handles on the Mauviel but they seem to be cast iron and could get hot.

Demeyere vs All Clad vs Mauviel

Thanks mwhitmore, I never use a dishwasher so that's not an issue. I like copper due to how it cooks, I am quite taken by the demeyere line.

Do you know if there is actually a big difference between the Pawson and atlantis vs the Mauviel and all clad?

Demeyere vs All Clad vs Mauviel

So I have about $1,000 - $1,600 to spend. I am looking at new cookware and am deciding between the following in the title. I am looking for what I feel is the "Best cookware" I have had Calphalon and Analon Copper Core but I am planning to steer away from non stick and go stainless steel. All you chefs and avid cookers what do you think of my breakdown? I am really feeling the Demeyere, but each line has so many differences I cant decide. I most likely will buy them from Bed Bath beyond with my gift cards.

All Clad D5 or the Copper Core

Demeyere - John Pawson or Atlantis-I saw industry5 but I am not sure of it

Mauviel M'heritage - I will be honest to me it just looks good, I know it's quality, they all seem to have copper and the stainless steel to surface to cook on, coupled with many handle types.

Would love to hear the discussion going here

FYI: I want it to work on Gas / induction / electric. Right now I use gas, I always hand wash as well so dishwashers don't make sense.

Paella in NYC?

Not necessarily true barber* I would not say that there is "great paella" in NYC. I find most of the time the Paella I make at home to be a lot more tasty than anything in the restaurants. I am going to give La Paella another go and I will write a review. I made a comment on outdated page that the best Paella I have had in NYC up to date was:

La Galicia Restaurant on the corner of w. 172nd street and Broadway in Washington Heights. 212-568-0163

The atmosphere is very laid back and more reminiscent of walking into a dive sailor spot off Valencia. The Paella I had was there seafood paella and they did not skimp on any of the ingredients. You are not going to get Calasparra "Bomba" Rice in it (more like whats used in risotto), but more of a Latin America version. I would definitely recommend making a trip like I did to their last year.

Restaurant Week Winter 2013

I can't decide earlier, it seems all the good options deal with Lunch. Then when you go to dinner to spend $38 a person the menu choices seem sub par. For Example, why would I go to Sushi Samba for dinner when the savings are minimal. Tao seems great, but their usual lunch deal is better than what they offer on restaurant week. Then there is Strip House and 21 club. Strip house is only lunch and 21club has the same thing for lunch or dinner, why go for dinner and spend $15 more if it's the same?

Choices, and I can't decide.

Best Knaffe Locations - Manhattan

I can give some updates, I forgot about this thread.

In my opinion if you are in Manhatan the BEST place for Knaffe is La Gazala. They have 2 locations Columbus and 78th and 46th and 9th.

Great Knaffe and the have traditional and a new twist version. Costs about $10 and takes 25 min to make.

Another good place is the Turkish Kitchen in Murray hill

Very Over Priced for what it is. I hear Dorians seafood shop will deliver. Or go to Citarella and have them steam it for you.

Pad Thai UES

So far my favorite Pad thai is at Room Service in Hells Kitchen. Unfortunately, they won't deliver to the UES so I am stuck trying to decide the best Pad Thai. Spice is ok, but much better to order the drunken man noodles.

After being in Thailand I am itching to find the best. Let the discussion begin.

All in all I rate Naples 45 'OK'
Cliff notes: Crispy crust with a not so distinct taste, Too few toppings when ordered, Cheese was exceptional.

I ordered a black olive cheese pizza and I have to admit it was tasty but there were far too few olives and for the price I was expecting something much larger and substantial. I felt the crust was crispy and the taste was good but for the price I would have wanted more. I literally ate the whole pizza in less than 6 minutes ( like the 6?).

Yeah the problem is that Sheepshead Bay is a little bit of a hike. In regards to Hideaway yes the price is Market Price.

There are other places too I wrote above in Manhattan. I am always down though for crab, lobster etc. Your place in Sheepshead Bay, is about 30 min away from Manahattan right? Does it come with the corn and fries? Or is it Extra? Also what days do they have it?

There Straight cheese or Grandma Pizza is great. Ask for it crispy as their Crust is tantalizing and mouth watering when your craving a slice and it turns into two...three.four...five... Damn the whole pie is gone and your all alone...
