Kitchen war injuries..

When we were first married I decided to treat my husband to lobster. Got a four pounder and a pot of boiling water. Thought, for some stupid reason, that I should take the bands off the claws. When it started waving its claws around I grabbed the first thing handy to stick between the pinchers so I could grab it.The wooden handle of my grandmother's carbon steel knife. I tried to dodge the blade and grab it but the knife slit the entire length of my finger. Word went out at the hospital er about the woman who was knifed by a giant lobster.

The Kool Dipper on Forest Avenue in Amsterdam is good for lunch. Homemade soups, fantastic Mexican Hots and hot crispy fries. You need to leave the area for fine dining. Pretty much a culinary wasteland.

The Otesaga Resort Hotel in Cooperstown is really good. The hotel looks like something out of a Stephen King novel. Sunday brunch is spectacular!

Chocolate layer cake at 10. The recipe called for 1/2 cup of coffee. I put in 1/2 cup of coffee grounds. I'll never forget that one!

August in Wellfleet MA ...breakfast, lunch, dinner, ice cream

Had dinner at Winslow last week. Service was a bit off (three of us were served our entrees ten min. before the fourth) but the food was excellent. Mussels were terrific and the cioppino was fantastic!
Struck out at the WO the last two times there and don't know if we'll try it a third time.

Sunday night in Albany- What's open and specially delicious?

Have you been to Shogun on Madison Ave? There's one in Delmar and the one on Madison recently opened. We've been there three times since it opened and everything has been wonderful. Never had better sushi and the tempura rolls are great. Sauces very good, also. Quiet enough to carry on a conversation, waitstaff friendly and well informed on the menu and an on site parking lot.

Up 9 and 20 to East Greenbush. Hannaford shopping center has a great new restaurant Chez Mike. Excellent quality and great service. Open until 10 on Friday nights.

We attended a party last week and the host dressed the fruit salad with a mixture of melted vanilla ice cream and grand marnier. It was delicious!

We're on our way to Albany

Specialty food shops go to Roma in Latham. Great pancetta, imported olive oils, cheese, pasta etc. Next door is a great butcher. A bit expensive but the sales are good and they also carry smoked bacon etc from Oscar's Smokehouse. Outstanding.

Trying to find recipes for muffalata Sandwich

Here's a recipe we've used since we first visited N.O. many years ago.

Dad’s Muffuletta

1 cup large brined green olives
1 cup Greek olives
½ cup olive oil
1 cup finely chopped flat leaf parsley
½ cup chopped roasted red peppers
1 tsp dried oregano
Juice of ½ lemon
Freshly ground black pepper t t

1 round Italian Bread approximately 8-10 inches
2 cups shredded greens (curly endive)
½ lb. Sweet Italian salami (mortadella) thinly sliced
½ lb. Spicy Italian hard salami (soppressatta0 thinly sliced
½ lb. Provolone
In a mixing bowl, combine olives, oil, parsley, red peppers, oregano, lemon juice and pepper. Cover and refrigerate overnight.

Cut the bread in half horizontally and pull out some of the soft dough in the middle. Brush both sides of the bread generously with the marinade using it all. Place half of the salad in the hollow of one piece of bread. Add layers of the greens, then sweet salami, cheese, hard salami and remaining greens.

Finally, heap the remaining olive salad on the other half of the loaf. Press the two halves together and wrap in plastic wrap. Put the loaf in the refrigerator covered with a plate and weight it with a 5 lb. Bag of flour or several unopened cans. Let it rest for at least 30 min to 1 hour or until you are ready to serve.
Cut in wedges.

How old is the average supermarket egg?

I don't think they're quite that old. I buy them at my local "dairy"/ convenience store. Maximum time from chicken to shelf is 3 days.
