Which is the best Lockhart/Luling Barbecue?

I've visited the "triumvirate" twice (two different weekends, but I hit them on Friday and Saturday each time, so I guess it's closer to four), and even in just that many visits, I know that each has good days and bad, and more importantly, good times of day and bad. Definitely plan to hit your target location at lunchtime, around 11:30 or 12:00. Go at 2:00 or 3:00 in the afternoon, and you're just asking for less than optimal meat.

As far as taste, I stumbled upon an interesting method to compare different meats on taste alone: Get your picks from each place, eat some while it's hot for the whole experience, but then refrigerate your leftovers. Take them out later and let them rest on the counter for a half an hour or maybe a bit more to take the chill off. Then, try each meat with it STILL COLD. This will pretty much make all of them equal in texture, but the taste will still shine through. It's quite eye opening; I compared brisket from Kreuz, Smitty's and Blacks, alongside some from Salt Lick 360 in Austin (not the original in Driftwood). Salt Lick 360 was decidedly "one dimensional" in flavor, whereas Kreuz's meat was like a symphony of flavor.

Recommended BBQ in Dallas.

I hope Rudy's in Frisco has improved since it opened; my wife and I had some a few weeks after they opened, and it was not even in the same league (nee, same SPORT) as the Austin/Lockhart scene. I've had better locally at Sonny Bryan's and even Dickies. Rudy's in Denton fared a little better, but probably still about the same or slightly lower than Sonny Bryan's. And to be sure, I am NOT a Sonny Bryan's "fanboy".

Best I've had in Dallas (and admittedly, I haven't had tons) is at Big Al's Smokehouse near Mockingbird and Lemmon. I'll have to give Odom's a try, though.

Simply Fondue (DFW)

I've eaten at both within the last 6 months, and I (and three others) prefer Simply Fondue in Lewisville. The ingredients were better quality and better prepared, and the spice packages were better.

Lockhart for dinner?

We've made the Lockhart pilgrimage several times now, but we've never had anything other than lunch around noon or so. I see that they're open until 6-8PM depending on the restaurant, but what are the chances of getting some really good food for dinner?

Has anyone eaten late in Lockhart? We're planning a trip next month, but some of the attendees can't get there until dinnertime; I'm trying to wave them off of Lockhart until lunch the next day.

BBQ SMOKED PRIME RIB IN LOCKHART

My experience exactly. We didn't get to Kreuz until about 2:00PM on Friday, and the brisket, while flavorful, was only warm in temperature and pretty dry. Thankfully, the sausage was a good as ever (but again, not hot). I've learned my lesson: If you can't make it before noon, expect a diminished experience.

BBQ SMOKED PRIME RIB IN LOCKHART

I had prime rib at Kreuz and Smitty's this past Friday and Saturday, respectively. I had had Kreuz's prime rib before, and the experience at that location was similar to last time: Great flavor, but overcooked. Prime rib should be no more than medium rare.

Smitty's, on the other hand, was fantastic. Perfect medium rare, good smoke penetration and great crust.

I still prefer the brisket and sausage at Kreuz, however.
