Do Telescopic Downdraft Systems work?

I had a Jennair countertop gas cooktop with a downdraft. I loved it!!! The downdraft sucked eveything in the air for miles lol. It was a little hard to clean, but u could put the filter in the dishwasher and there was a jar that collected the grease underneath. My jennair took no cabinet space below. I used the area for pots and pans storage. No heat was sucked, in fact, the downdraft barely fanned the flame. I do not know anyone who has liked the thermador pop up. Good luck.

I love pie, My mom made the best apple pie, but ,alas I did not inherit the crust gene. I love banana cream, blueberry with Maine berries, and pumpkin with whipped cream.

Help! Seafood dinner for 9 on the NH seacoast....

The thing about Chauncey Creek is the place itself. Its right on a beautiful river. If the weather is nice go for it. Your guests will be impressed. Since u can bring in your own drinks u will save in that department and I have seen people bring in cakes for birthdays, so bring in your deserts too and celebrate someones birthday. Just drinks alone for 9 people could run high at a regular restaurant. Also take the crew to Flo's for hotdogs, and Big Daddys for icecream. Oh Maine, I miss you, Florida is 95 degrees today.

ME, NH and MA recs

My dd went to college at UMASS Amherst so the pioneer valley is familular to me. Do not miss Barts Icecream. Its the best. I love therir pumpkin icecream,but had it in the fall so it may not be available in summer. The area is a pizza heaven. Ask a local where to eat pizza and they will have a lot of opinions. enjoy

Potato Latkes question

WELL IN MY OPINION THERE IS A DIFFERENCE BETWEEN 'HASH BROWNS' AND POTATO PANCAKES. AFTER I GRATE THE POTATO IN MY FOOD PROCESSOR I REMOVE THE SHREADS AND PLACE THEM IN A BOWL WITH ICE WATER. IN SMALL BATCHES I RETURN THE SHREADS TO MY FOODPROCESSOR,(AFTER SQUEEZING WATER OUT) WITH THE STEEL BLADE AND PROCESS FOR A SHORT TIME TO MINCE UP THE THE POTATO A LITTLE. THIS CHANGES THE TEXTURE FROM HASH BROWNS TO PANCAKE. I PLACE THE BATTER IN A BOWL AND ADD A SMALL AMOUNT OF FLOUR (SMALL IS KEY BECAUSE THE BATTER CAN GET GLUEY),AN EGG,AND SALT AND PEPPER. I LIKE MY PANCAKES ONIONY SO I GRATE AN ONION ALONG WITH THE POTATO. THE HARD PART IS THE FRYING. I ONLY USE CRISCO SOLID SHORTNING. I LIKE MY PANCAKES CRISPY AND CRISCO IS THE BEST FOR FRYING POTATO PANCAKES. MELT CRISCO AND ADD BATTER BY THE SPOONFUL. I LIKE THEM FAIRLY SMALL BECAUSE I USUALLY USE THEM AS APPETIZERS. WHEN FRYING SQUISH PANCAKES WITH SPATULA TO INSURE CRISPNESS.ADD MORE CRISCO AS NEEDED. SERVE WITH APPLESAUSE OR SOURCREAM. SOMETIMES I PUT CINNAMON AND SUGAR IN SOURCREAM. ENJOY! PS I DRAIN PANCAKES ON PAPER BAG LIKE MY GRANDMOTHER DID. I REMEMBER HER GRATING THE POTATO BY HAND. SHE WOULD HAVE LOVED A FOODPROCESOR.

My fav in Hampton beach is Ocean Wok. Its across the street from the entrance to Hampton beach State park. Its awsome. Kids will love the juicy chicken wings.

Best packaged non-bakery store bought cookies

I have a new favorite cookie.........................WALMART Sams choice lemon white chocolate cookies. They taste homemade. Crispy yet soft,very fresh tasting,kinda like the texture of PF sausalito w/out the coconut. There r several varities in this new cookie line. The dark chocolate chip sounds good, but the chips are awful.

If I can only afford *one* fancy knife; what should it be? Santoku? Chef's?

Well I love to chop. I make coleslaw all the time so I can chop cabbage. I have an 8" shun my daughter bought me as a gift. I use it everyday. I also have a ceramic 6" I use all the time. I don't get the santoku. Its awkward for me. I can peel a grape or carve a turkey with my shun, so I would say Japanese is the way to go.

Tampa - You've Just Flown In ...

I would put my 2 cents in for Crazy China Buffet on Dale Mabry. Its probably 10 minutes from the airport. Its asian fusion, so it will please everyones pallett. Their sushi is the best and the duck is fab too. It has every imaginable asian food and the deserts are good too. Its fast cuz its a buffet and you can be on your way south in an hour. Have fun in Tampa Bay!!

casual rehearsal dinner in York-Portsmouth area

Both my daughters got married in Maine. One got married at nubble light and had her reception at the york harbor inn. I give it a 5 star rating because the staff is superior and food is good. The other got married and had her reception at clay hill farm in cape neddick. I also give 5 stars to clay hill for the same reasons. Both places are pricy, but well worth it. Cliff house and stage neck were very difficult to work with, so I do not recommend either. good lock philly

I hate my LC grill pan!

Well,I hated my lc pans ffrom the beginning. I bought a grill pan and small fry pan. I tossed the grill pan after using it many times. Hated it. The surface was odd and did not perform as I thought. The frypan performs ok, but it got a chip in center of the pan. When I complained to company they pretty much said too bad. So i would never recommend lc. I finally bought some allclad. I love it. A bit hard to keep clean,but who cares dh does the dishes!

Cook's Illustrated baklava

I have made baklava many times. There really is no trick, its just hard work to layer everything and work with the pyhllo. I alway use the rule cold syrup hot baklava or cold baklava and hot syrup. I serve in individual cupcake papers. yum......

matzoh balls: sinkers vs. floaters

I am the valadictorian at Schmultz University. I keep a frozen baggie of chicken fat in my freezer @ all times, homemade of course. I am a traditionalist. I follow the recipe on the box of MANISCHEWITZ matzoh meal. I like the balls to float to the top and hard simmer for 45 minutes. Then I put them in the soup until its ready to eat. My old auntie Minnie told me salt in a matzoh ball is everything, if u forget it u loose. I just made matzoh balls for my grandaughters first ball experience. She loved them!

How do you cook your meatballs?

I bake them in the oven for 25 minutes @ 400. The question also is,...how do u make them. I use 2/3 ground chuck and 1/3 ground pork. I season with basil and lots of oregano. I thow in some seasoned breadcrumbs,egg, and a bi tof milk. s&p to taste yummo and ez

How, when, must I make reservations in Rome?

When we were in Rome we ate lunch in cafeteria type restaurants where the regular Roman people ate. We stood in a huge line out the door . Inside we grabbed plates and put it up to the person serving the food we wanted and he put it on. We paided at the end of the line. yummmmyyyy!!! We also ate at a lot of pizza places too. Don't miss the Vatican. The Sistine chapel will bring you to your knees!

Favorite Halloween Candy

I just ate 2 mini Snickers bars, my fav. My daughter is allergic to peanuts, so at Haloween when she was little, she had to come home and seperate all her candy into two piles, peanut and non peanut. I ate the peanut stuff. Please be aware of peanut allergies. We all go to my daughters house that has millions of kids trick or treating. Its awsome..............however, last year 2 teen girls dressed as dominatrix and slave. A little different then when I was a kid and dressed up as my mother in her high heels.

I need new knives!

I have an 8" Shun knife my daughter got me for Christmas. I use it for everything. I could peel a grape with it. I also have a 4" ceramic knife I love. Those are the only knives I use. How do I sharpen a Japanese Knife?? Can a ceramic knife be sharpened??

Dutch oven pot roast - How long? How hot?

This is my pot roast recipe from an old Maine recipe book. Saute lots of onions in a dutch oven.Add beef [I use whatever is on sale],1 large can of tomato juice,I like Campbells, 2 cups water,1 beef cube, 1/4 cup[ish] brown sugar, salt and pepper. Place in oven@ 350 until fork tender.. Cook at least a few hours. Also cover the pot with heavy duty tin foil then lid. Add more water and cubes depending on the size of the meat. No need to brown meat. I like the pot roast on the sweet side,but you might not, so start with less brown sugar and taste. I also add potato and carrots about 1/2 way thru. Yummy and easy...

Chopped Liver

I know when u are pressed for time its a hastle to cook anything cuz u have to prep, cook, and clean up after ugh!!! In my fam liver is king. Always homemade or else!!! When the old Grandmothers could't cook any more the youngers learned how to make it. IMHO liver need s to be made all at once except for the eggs which I always make ahead. Old eggs peel better. For 1 lb of fresh liver..........5 eggs..1 very large onion...and.....CHICKEN FAT. Take a glob of fat saved from a chicken ...or 2 globs.or 3, place in large frying pan. Add the onion and saute afew minutes. Add livers that have been cut into small piece so they cook fast. Salt and pepper to taste. Put eggs,onion and liver mix in a food processor,and watch the miracle happen. When my grandmother made liver she chopped everything by hand in a wooden bowl. Every time I make liver I think of her slaving to make it. Its sssssssssssooooooo easy. Prep time to chop onion wash and slice liver and peel eggs is 10 minutes, cook time 10 minutes processer time 30 seconds[don't processs long]. Clean-up 10 minutes. Total time to make a little slice of heaven.30 minutes 30 seconds. Chicken fat,nectar of the Gods, is easy. Next time u make chicken soup and put it in the fridge scoop the fat off the top.and use it in chopped liver. The fat globs just melt into the liver. either one or both is ok for liver.

New Sub-Zero coming in tomorrow

I did a custom kitchen back in the day.early"90s". It had a sub-zero. When I sold the house I pined for that fridge and still do. It was the perfect fridge. Am I the only person who pines for a fridge???????? Anyway, the best part about the fridge was the shelf space. You have plenty of room for large platters, whole turkeys, watermelons, a side of beef, or the whole cow for that matter. Its a party fridge, enjoy it.
