Two New Boards: Vegetarian & Vegan and Special Diets
I think that's more accurate. Thank you!
Paleo diet - any experience?
Hi five, sister! I still splurge too, but now it's pretty specific. Pizza, the odd cookie craving, things with almond paste. With food like your burger (OMG DROOL - I LOVE the idea of the haloume with the tomato/basil/olives, that's genius!) it's hard to save space for baked stuff!
Paleo diet - any experience?
Just had to pop my head in here. I eat lacto-paleo/primal, and I am quite happy with it. I've recalibrated my sweet tooth and I enjoy fruit again. Salad tastes like less of a duty. I have more respect for the meat I'm putting in my mouth. I've dropped maybe 30 pounds WITHOUT TRYING and while eating twice the fat I used to. I'm also seeing my autoimmune and allergy issues dial way back. My endocrinologist was blown away when she saw me three months in to just eating primal.
What really amazes me is how I don't really miss baked goods. I grew up with wonderful baked goods, nearly 24/7. I was definitely rewarded with food. And even now I can knock out a sourdough baguette, gluten free, any kind of cookie or cake - and I used to really define myself by that skill. But you know what? I feel blah when I eat that stuff now. I've probably made brownies 6 times in the past year, and each time, I eat about 2 in an 8x8 pan and end up tossing the rest. I used to LIVE for that stuff. That part blows my mind. My identity was wrapped up in flour - and then 3 years of gluten free flours - and now, meh, I don't even think about baking. I guess I MUST feel a ton better!
Two New Boards: Vegetarian & Vegan and Special Diets
Can we get the subtitle edited on the Special Diets board? I'm a paleo eater and low carb does not remotely define the diet. Removing grains, legumes and often dairy - eg. removing lectins and anti-nutrients and eating nutritionally dense food? That defines paleo. But there are a ton of paleo eaters who can eat their weight in fruit and veggies, and those are carbs. If you want some reference points, I'd suggest a quick review of Mark's Daily Apple or Paleohacks or Clothes Make the Girl or the Whole 9 folks (etc). Low carb correlates to paleo, but it isn't what paleo is.
"Least Favorite Vegetable" Poll
Oh my god, the inulin! They were the least digestible food I've ever put in my mouth. It was like digesting big legos. Pity - they were good, and they're so abundant at the farmer's market!
Sharing Ideas for Gluten-free Eating
Google the Gluten Free Doctor (Dr. Jean Layton) and her sourdough. It's awesome.
I've also found that baking my bread in a perforated baguette tray worked well. Good crust!
Where to purchase coconut oil that has no flavor
Tropical Traditions (google the online shop) has very high quality expeller pressed coconut oil, conventional and organic, and periodically runs really good sales. I snagged some organic expeller CO from them recently on a buy one get one sale, and I really like it. I will never go back to vegetable oil for a neutral oil. (It also is magnificent after a shower!)
Television-free Bar in Bellingham?
This is an old thread, but such a worthy topic, I had to revive it! Another one to add to the list: Daphne's in Fairhaven. Fabulous cocktails, done well with good booze, and it's small and quiet. Such a nice place.
Trader Joe's Yea/Nay Thread - 2nd quarter 2012
This one was so bad I made a point to come here tonight and post: the Costa Rican peaberry coffee is AWFUL. I'm a coffee addict and heavy cream can mask many sins, but this stuff is abysmal even when freshly ground and doctored. The smell off the beans just gets worse with heat.
Trader Joe's Yea/Nay Thread - 2nd quarter 2012
Amen, GHG! The science just isn't there, and we've all been told otherwise. I'll keep eating my coconut oil and grass fed butter, thank y'all very much! :)
Foods you dread making because they’re time-consuming
And I would love the recipe for the flan! Oh, pretty please? I'd like to try a recipe that comes with a stamp of approval. The only flan I've ever been blown away by was by some lovely Michoacan ladies who live a few hours away...I miss it!
What do you wipe your counters with?
I wish people had exposure to more than just tea tree essential oil. There's a whole huge world of good stuff out there. Right now I'm using a good bit of palma rosa - smells nice, kills stuff, gentle enough to put on my face.
A Sour Cream Glut
Ice cream! Sub it in for half the liquid - stirring it in to the custard after you've brought the eggs up to temp. It's the last thing you add before it hits the fridge. I like this best with just plain vanilla or lemon.
A Sour Cream Glut
Recipe, pretty please? I'm really getting into those traditional paprika-laden dishes...
What to do with leftover Sweet Merlot....
How about deglazing a pan with it (red meat something, with some heat?) and chucking in some dried tart cherries and finishing with butter? I used to do something like this with black mead and venison. Drool.
Bourdain [moved from Houston]
Marymac, you've seen this, right? hehe http://www.wideawakeinwonderland.com/tag/anthony-bourdain-naked-with-bone/
Recipes from Smitten Kitchen blog.....what are your favorites??
Just had to pop in to say oh, try Pernigotti for those brownies! Oh, my my.
"Hitting" on the Waitress (server) Is it OK?
You put your finger right on it. I knew reading that made me feel like a meaty piece 'o mannequin for a reason.
Your disappointing purchases from Costco
The Kirkland low sodium bacon. I am taking back the remaining three pounds. Even though I have to drive across town. It's not even worth using as an ingredient. Blech. Chemically tasting greasy crap.
Azores sweet treat recipes?
I can't believe I forgot this one - linguica rolls! That was the one thing my sweetie asked me to learn to make. And now I'm addicted, to I make them gluten free.
Yummy foods while undergoing chemo
Big, warm, healing happy thoughts to your sister. The wisdom seems to be that everyone reacts differently. When I fed my friend through it, my home health & hospice nurse advisor reminded me to just try a variety of things and to not be offended if good food tasted bad. So we just cooked whatever he thought "might" taste good. Our friend didn't know till he tried it. For him, Italian Wedding Soup was a hit. Now, during radiation, he's into tortilla chips and salsa. Who knows? The important part is the trying and TLC and the calories. She's lucky to have you.
When the host is late serving the meal - also rude? Is it ok for guests to leave?
I vote for incompetent. Who would ever want to go back? It's hard to have fun if you're starving AND tired.
what to do with fruit that refuses to soften/ripen?
I keep meaning to make Saving the Season's piquant pickled pears... They look lovely!
Vegan expectations?
Customer service doesn't necessarily equate to menu juggling. That would be like me as a celiac going to my local Italian joint, where they are known for their calzones, and expecting them to have a tidy gluten free version for me. And then expecting no cross-contact with gluten. Some places just aren't set up that way, and it's okay. I know the places that will take care of me, respectfully, and I give them my business.
I think we also need to be reasonable when we're eating in places full of Sysco food. If they're in the back reheating instead of cooking from scratch, then it's really not a good idea to expect them to cater to a special diet. A kitchen without pride isn't a place to make special requests.
Vegan expectations?
No kidding re: the chicken stock or butter. If you're going to make those kinds of requests, you've got to hit the basics first. Otherwise it just undermines your credibility as a special-needs diner (of which I am one).
Why Some User Names are Red
Agreed. It is much less useful/interesting to this user if it is optional.
Azores sweet treat recipes?
I thought of David Leite and yes, here's a recipe for pasteis de nata: http://leitesculinaria.com/10318/writings-portuguese-azores-hearty-cuisine.html
My better half (who would be third generation) says the baked good that he really remembers being fed as a kid is Portuguese sweetbread. Wish I could be more help! Sounds like a wonderful project.
