What to do with Maseca (masa harina)?

Champurrado

1/4 cup masa harina (corn tortilla flour)
2 cups warm water
2 cups whole milk
1 disk (3.25 oz)Mexican chocolate, chopped
3 oz piloncillo cons, chopped or 1/2 cup packed brown sugar
1/8 teaspoon ground anise seeds (I used star anise)

In a large saucepan, slowly add masa harina to the warm water, whisking until combined. Add milk, chocolate, piloncillo, and ground anise seeds.

Heat over medium heat just until boiling; reduce heat. Simmer, uncovered, about 10 minutes or until chocolate is completely melted and sugar is dissolved, whisking occasionally. Serve immediately.

Makes 4 servings.

I purchased some at Williams Sonoma ... you might want to call before you make the trip though ... Not sure if Surfas is still in Culver City (I left the state two years ago) but pretty sure they would have it if they are still around.

Fatty, filling bean dishes?

How about a thermos of Cream of Wheat or other type of porridge. Some other dishes that come to mind are dishes my grandmother used to make as she had many mouths to feed with little resources. Chorizo with refried beans wrapped in a flour tortilla? Chorizo and fried potatoes? Arroz con pollo (baked chicken in rice with a tomato sauce/chicken broth ... augment with bell peppers, onions, whatever you have on hand) I live in the southwest and we make a hearty stew of pork, green or red chile, and hominy. You might also consider looking at some Amish or Mennonite cookbooks since they offer filling recipes with minimal cost . Best of luck ... he's lucky to have such a great partner to take care of him!

Pork Bones- What to do?

I'm with John ... throw the pork bone in the crockpot with extra neck bones, LOTS of garlic and onion, couple of bay leaves to stew a while. throw in a can of hominy and some green chile or red chile sauce. Season with oregano and ( if using red chile a little sabor de tomate con pollo (in the mexican food section). Serve with lime wedges, shredded cabbage, cilantro and corn tortillas ... and a beer ... if it doesn't taste good ... drink another beer.

Pecan Pie: Can I freeze it?

Ideally I would like to make a couple of pecan pies today to freeze and enjoy on Christmas Day. Does anyone know if Pecan Pie freezes well? I would use my FoodSaver to assure freshness. Here's the recipe:

INGREDIENTSFlour, for dusting the work surface Flaky Pie Crust 1 cup packed light brown sugar, dark muscovado sugar, turbinado sugar, or light brown sugar 2/3 cup light corn syrup or Lyle’s Golden Syrup 4 tablespoons unsalted butter (1/2 stick), at room temperature, plus more for coating the pie plate 2 tablespoons dark rum 3 large eggs 2 cups pecan halves, coarsely chopped (about 8 ounces) 1 teaspoon vanilla extract 1/4 teaspoon fine salt Slightly sweetened whipped cream or vanilla ice cream, for serving (optional) INSTRUCTIONSHeat the oven to 350°F and arrange a rack in the lower third. Coat a 9-inch pie plate with butter; set aside. On a lightly floured surface, roll out the dough to about 12 inches in diameter and between 1/4 and 1/8 inch thick. Without stretching the dough, line the prepared pie plate and trim to leave a 3/4-inch overhang. Fold the overhanging dough underneath itself, crimping the edges with two fingers along the rim of the pie plate to form a high, fluted border. Cover the pie shell in plastic and chill until needed. Place the sugar, syrup, butter, and rum in a large saucepan over medium heat and bring to a boil. Boil for 1 minute, stirring constantly and scraping back in any foam that clings to the sides of the pan. Remove the pan from the heat and set aside to cool to lukewarm, at least 15 minutes. Beat the eggs in a small bowl until the yolks and whites are broken up and incorporated, then beat into the cooled syrup. Add the pecans, vanilla, and salt and stir to combine. Pour into the chilled pie shell. Bake until the filling is set but still slightly wobbly in the center, about 50 minutes. Cool the pie completely on a wire rack. Serve at room temperature with whipped cream or vanilla ice cream, if so desired.

Spiral Cut Ham: Trader Joes, Costco or Sam's Club

Need to purchase a spiral cut ham for the family potluck/gathering on Christmas day. Need to feed 10 so how big a ham do I need? Also any thoughts on taste - I have Trader Joes, Costco or Sam's Club nearby - who sells the best tasting ham in your opinion? Thanks!

Pumpkin bread with 1 whole can of pumpkin?

here's a recipe that uses the whole can but you do end up with more than one loaf. Also - sometimes when I have fruit filling leftover I make mini-empanadas/hand-pies using prepared pie crust.

Ingredients
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/3 cup cold butter, cubed
1 cup chopped pecans, divided
2 packages (16 ounces each) pound cake mix
1 can (15 ounces) solid-pack pumpkin
4 eggs
3/4 cup water
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
Directions
For streusel, combine brown sugar and flour in a bowl; cut in butter until mixture resembles coarse crumbs. Stir in 1/2 cup pecans; set aside.
In a large bowl, combine the pound cake mixes, pumpkin, eggs, water, baking soda and pumpkin pie spice; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in remaining pecans.
Divide half of the batter among three greased and floured 8-in. x 4-in. loaf pans. Sprinkle with half of the streusel. Top with remaining batter and streusel.
Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 3 loaves (12 slices each).

Home made jam for wedding

www.foodinjars.com for some great recipes and canning guidelines. I believe Kerr also has alot of good info on their website. I think a jar of jam is a wonderful favor ... you might consider placing a label with a suggested eat-by date? I've also seen jam favors with little stickers that say "Spread the Love" ... awww ... Best Wishes!

Afternoon Wedding Buffet for 40 on a BUDGET

I'd throw a brisket, nicely sliced on a tray. The menu is light but maybe a little too light for guys ... sliders or brisket served with small rolls might be good. (Had it over the weekend at a party and everyone loved it)

Too Much Leftover Smoked Brisket!

Freeze it ... brisket freezes really well utilizing a Food Saver. I had the same problem last month ... so froze the leftovers ... tastes great reheated in the oven with a little beef broth.

for breakfasts i'd recommend an "Oatmeal Bar" ... you can find recipes for crockpot oatmeal then just have toppings ready on the side like honey, cinnamon, banana, blueberry ...whatever your heart desires. As far as dinners go ... tacos are great but you can also make the meat filling ahead of time and freeze. Just defrost the day you are going to make tacos for dinner. Also chicken cacciatore using a Costco roaster, they sell an awesome pasta sauce by White Linen, saute onion and bellpeppers ... serve over fettucine ... very filling.

Great Cilantro Salad Dressing??

Don't have a recipe but I have found Trader Joes has a decent salad dressing with the same ingredients you are describing. Delish.

"texas style" beans

I made Chris Kimball's Drunken "Borracho" beans a couple of weeks ago. This recipe is perfection IMO. I served it with brisket ... but the leftovers were enjoyed with cornbread. If you don't like heat I would recommend just adding some of the sauce from the can of chipotles ... there was some heat in the beans - but I added three chipotle peppers because we're pretty hard-core chile-eaters here in Albuquerque :)
Serves 4 to 6
Drunken "Borracho" beans/frijoles
8 ounces chorizo sausage, cut into ½-inch pieces

1 onion, chopped fine

4 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon chili powder

1 pound pinto beans, soaked overnight and drained

1 (12-ounce) bottle dark Mexican beer (see note)

5 cups water

1 tablespoon brown sugar

2 teaspoons minced canned chipotle chiles in adobo sauce

Salt

2 tablespoons chopped fresh cilantro

1 tablespoon lime juice

1. Cook sausage in Dutch oven over medium heat until browned, about 8 minutes; transfer to paper towel–lined plate. Cook onion in sausage fat until softened, about 5 minutes. Stir in garlic, oregano, and chili powder and cook until fragrant, about 30 seconds. Add beans, beer, and water and bring to simmer. Reduce heat to medium-low, cover, and cook until beans are just soft, about 1 hour.

2. Stir in sugar, chipotle, and 1 teaspoon salt. Continue to simmer, uncovered, until beans are completely tender and sauce is slightly thickened, about 50 minutes. Return sausage to pot and simmer until sausage is tender, about 10 minutes. (If mixture becomes too thick, add water.) Stir in cilantro and lime juice and season with salt. Serve. (Beans can be refrigerated in an airtight container for 4 days.)

needed: pasta supper inspiration

Pesto chicken/shrimp/salmon with farfalle pasta. Saute the chicken in a little olive oil, garlic and sambal olek (asian chile sauce). Then add a container of prepared Pesto sauce (I use trader joes). Add cream, parmesan cheese until creamy. (Or TJ prepared alfredo sauce, gasp) Add cooked and salted pasta. Toss in some diced fresh tomatoes, handful of fresh cilantro and green onions. May sound a little strange but this dish is always a winner when I serve it. Also good with grilled salmon or shrimp.

Potluck Showstopper Needed

How about a nice Mexican Shrimp Cocktail? Here's a link for a similar version I have enjoyed at restaurants. Some may balk at the use of Ketchup but I prefer mine that way. Serve in goblets or martini glasses with saltines and fresh avocado once you arrive to your destination. A nice Modelo beer would be a nice side too :)

How do YOU make Sloppy Joes?

The recipes sound great. I actually made sloppy joes last night for dinner using the Williams Sonoma Sloppy Joe sauce in a jar. It was very good ... worth the 16 bucks.
