Hi. I bake professionally at times. My favorite all around chocolate is Callebaut. I buy it in 5 kilo blocks at The Restaurant Depot. There may be one in your area. A 5 kilo block runs around 30.00 and is available in unsweetened, bittersweet, milk, and white. I'm not sure about semi-sweet, as I use choc. chips for that.

I can make just about anything but for his birthday dessert he wants me to make "a chocolate mousse cupcake with cocoa puffs, just like the Bluehill Tavern" Any help out there?

I have begun collecting Le Creuset cookware beginning with pieces I inherited. I would like to find some info. on the various lines and colors, especially the meaning of the numbers stamped on the bottom of many pieces. The more info I have the better I can navigate the likes of E Bay. Also, does anyone know of a good source other than E Bay for purchasing vintage pieces? Thanks for any help I may receive. Debbie

Hi- I've developed a healthy version of a bskery style muffin for my sweet tooth husband:

1 cup yellow cake mix
1 1/2 cups all purpose flour
1/2 cup Splenda (or sugar)
2 t baking powder
1 t cinammon
3/4 cup reduced fat milk
1/2 cup applesauce
1/2 cup egg substitute (or 2 eggs)
1/4 cup oil
2 cups fresh blueberries

1. Whisk together dry ingredients (first 5)
2. In a separate bowl whisk together remaining ingredients (except blueberries)
3. Combine wet and dry ingredients. Stir only until blended. Stir in blueberries
4. Fill lined muffin cups (12) Cups will be full.
5. Place muffins in a preheated 400 deg. oven.
6. Close oven door and reduce heat to 350 deg. Bake 18 to 20 min.

You can add fruits, nuts, or spices of your choice. You can also ad 1 cup of quick oats. Just reduce flour by 1/4 cup.

as far as Federal Hill goes Bicycle and SoBo are the besst choices for interesting food.Vespa is slated to reopen soon. Regis is a nice spot to relax with friends or dine alone. The food is above average but not inspired. If you are willing to travel a bit north on Charles street yon can dine at Saffron and I'm sure you will enjoy yourself. If you want to walk to the Harbor area try Blue Sea or Mex. As other posters have suggested, Fells Point has a larger selection. Try Paza, The Black Olive, or Louisianna
