Need recipe for "Birds Nests"
Many years ago I went to Italy with my family, mainly the San Marino area. I still recall a dish we had and I would like to recreate it. I will describe it: Long narrow lasagna noodles rolled and filled with white sauce, ham, peas, red sauce. The "rolls" were served on the side so it resembled a spiraled birds nest. I do not recall if there was any cheese involved. Has anyone ever had or made anything similar? My Nonna always called them Birds Nests but I have had no luck researching them under that title. Casual Dinner in Philly Friday night
First time in Philly...looking for good casual dining without the need for reservations. Brew pubs, burgers, crab cakes, fish and chips with a Philly flair. We will be staying at Loews Hotel which I think is near the Reading Terminal. We will probably be out and about looking at the historical sites and such. Any recs?

I doubt we would be up for a high-end meal since we tend to be very on the go, walking, shopping, exploring etc. So the markets etc are perfect for us. What about seafood? Is there an abundance of seafood since Philly is fairly close to the ocean? Also, if we wanted to drive to the coast, is there a place that would embody nature and beach in that area? thanks!

Looks like we will be there on a friday and saturday. That reading terminal market....is that just what it sounds like?....an open market with various vendors and such? Which is better....the RTM or the italian market that someone else mentioned?

The menu at Rattlesnake looks excellent! Unfortunately they are closed on Mondays. Right now we are leaning toward Seldom Blues. We are also planning on going to the Science center for that body exhibit afterward. It has been extended until September I think.

For my birthday next monday, my hubby suggested we go out for a nice dinner or lunch of my choosing. Since we don't eat upscale very often, I want something really fabulous. It can be in downtown Detroit or in the burbs. Though I have heard great things about Tribute, I don't think we want to spend quite that much. Maybe something in the $100 to $150 range for lunch or dinner. What will knock our socks off?

Butchers Inn was on Winder street. Just a few steps off the beaten path. The other restaurants were crazy busy, but this was hidden enough to only be about a 15 minute wait. I had the Butcher’s Favorite: French Toast in Grand Marnier Batter and Michigan Maple Syrup, bacon or sausage and breakfast potatoes. Delicious!
Eastern Market Detroit Michigan
Well, we went to the Eastern Market on Sunday. As planned we got there at 7:00 am. No problems navagating through traffic, though we were surprised that there were already a good number of people there. We parked in the parking structure and got a good spot on the lower level near the door, perfect for making drop-offs of our purchases. We got some good deals on flowers and produce. We walked across I-75 to a meat place...can't think of the name of it....but it had many vendors in the building. I bought a t-bone steak and some country ribs to make for dinner. We ate an excellent breakfast at the Butchers Inn. All and all it was a good day. I now feel comfortable with the area and plan on making many more trips. thanks for the info!

Suggestions for roasted pork shoulder.
Here is the recipe:
Recipe: Slow-roasted shoulder of pork with salsa verde
We developed the recipe for this succulent roast in 2005 and we still dream about it.
Times Staff Writers
Total time: 20 minutes plus 8 1/2 to 10 1/2 hours roasting time
Servings: 8 to 10
10 garlic cloves, peeled
1/2 cup fennel seeds
2 tablespoons coarse sea salt
1/2 teaspoon freshly ground black pepper
5 to 6 small dried red chiles, crumbled, with seeds
1 boneless pork shoulder butt (about 6 to 7 pounds)
1/2 cup hot water
Juice of 1 lemon
1/2 cup chicken broth
4 tablespoons olive oil, divided
Salsa verde (recipe follows)
1. Heat the oven to 450 degrees. Using a mortar and pestle, crush the garlic and fennel seeds and mix them together. Add the salt, pepper and chiles and combine.
2. Cut 1-inch wide slits all over the surface including top and bottom of meat. Rub the garlic-seed mixture into the slits.
3. Heat 2 tablespoons olive oil in a large, heavy Dutch oven. Sear the meat on all sides over medium-low heat for about 10 to 12 minutes. Do not allow the garlic to burn.
4. Remove the roast from the pot, add the hot water, stirring and scraping the bottom to deglaze the pan. Place a rack in the bottom of the pan, add the meat, fatty side up, and roast in the oven uncovered for 30 minutes.
5. Pour the lemon juice and the chicken broth over the meat. Brush with the remaining olive oil.
6. Reduce the heat to 250 degrees, cover the pan and roast the meat 8 to 10 hours, occasionally basting with pan juices. The roast will be done when the meat is falls apart when barely touched with a fork.
7. Remove the roast from the pot and place it on a serving platter. Skim the fat from the pan drippings. Serve pan drippings on the side or drizzled over the meat.
Suggestions for roasted pork shoulder.
Over the weekend, I made the roasted pork shoulder recipe that was in the LA times recently. The recipe called for a 1/2 cup of fennel seeds, garlic and dried red peppers. The finished product was EXCELLENT. I followed the recipe exactly and roasted it for nearly 10 hours. Though I liked the fennel flavor, it was a very strong and prominent flavor. Does anyone have any suggestion for different flavors using the same technique?

So, I got home last night and ran out of time to make it to the store. I had to make do with what I had. I used toasted Oatmeal bread, tomato, shredded lettuce and mayo....the twist I did was sprinkle the bacon with brown sugar and ground mexican chilli powder while it was cooking. this made for a very tasty sandwich. The bacon was carmalized and a little sticky with a kick. I think it would have been really good with the Avocado. There are lots of great ideas here for next time. thanks!

I wish restaurants would make less and charge less. With salad and sometimes an appetizer, it's impossible to finish a whole meal. We ALWAYS take our leftovers home though.

I am going to test this. I am pretty sure I am using too much wine. And I don't ever think of using stock. The stock would probably mellow out the too-intense flavor of my pan sauce.....and the cream too.

Never read the book but my dad was in the restaurant/bar business for years. He worked 15 hours a day every day for years. He would take half a Sunday off every other week. It's was a lot of work and he made a decent living but probably not worth the time.

I see...so maybe the other flavors (lemon juice, capers, butter) become too concentrated and that's why my sauce seems to strong? Also, next time I will try wine AND chicken stock like QueenB suggested.

I made the scallops and removed them. There were browned bits stuck to the pan. I added capers, lemon juice, wine, a bit of butter. Then simmered it until the bits were dissolved and it was reduced down quite a bit. It was ok, we still ate it ...but I know it could be better.
