yes you need to chill it and remove the fat. it will go rancid and can prevent the jars from sealing properly.
but NO YOU CANNOT USE A WATER BATH. stock is a low acid product and needs to be pressured canned. here are the directions:

Alternatives to Ball two-part canning jars?
As long as you are only using them once the only difference between 1 and 2 piece lids is being able to check the seal. The depressed center is only so reliable. With a 2 piece lid you should be able to flip the jar upside down to make sure it's sealed (you really shouldn't be able to open a properly sealed jar with your bare hands).

any natural foods store that sells spices in bulk should have citric acid and probably tartaric acid. that way you can just buy the amount you need.

I make sweet potato burritos by combining roasted sweet potato with black or pinto beans cooked with aromatics and chiles. I puree that and serve the burritos with some cheese salsa and ideally some cooked greens. These freeze great.

this is the opposite of what you asked--but I cook it in a small crock pot (the kind they market for dips). Takes about 30 seconds before bed and tastes a whole lot better than the quick cooking type.
Your quinoa recipes
This is quick and comes together from pantry staples.
Quinoa with corn and scallions (roughly from vegetarian cooking for everyone)
Saute the white part of 1 or 2 scallions of green onions. Cook one cup of quinoa with 2 cups of veg. broth or reconstituted bullion. Just before it is done stir in a couple cups of frozen corn and top with chopped greens from the onions and crumbles feta or cheddar.
Lately I've been grating a couple carrots into the pot while it's cooking. Yummy and gets some extra veggies into it.

You can usually find the jars at hardware stores that have a canning section or at kitchen supply stores. I just buy them whenever I see them at thrift stores.

Did you check earthfare? The earthfare in Raleigh carries Lyle's, so I would think the one in Asheville would as ell.

Darn it, I hate going to the Carrboro market. I wonder if we could get him back.
Raleigh Farmer's Market
The downtown market is nice, but most of what people sell are standard commercial varieties. For more interesting varieties you should really try going to the smaller farmers markets that work with smaller farmers. In Raleigh the Moore Street Farmers Market is open on wednesdays around lunchtime. Durham, Carrboro, Hillsborough, Wake Forest, and Saxapahaw all of nice markets as well. If you liked what you got at the big farmers market, you will love what you find at these, including lots of tasty pork.

Does anybody know what's happened to the guy who used to sell fish next to the Durham Farmers Market? I haven't seen him since winter. Is he gone or has he been hiding somewhere?

here's what maple view farm said:
Our buttermilk is cultured it is the only way the health department will allow it to be made. The milk that is leftover after making butter is not saleable. (That is the old fashion variety) Our buttermilk is made with whole milk.

I'd guess that its cultured whole milk which may be further from the real thing, but its tasty and great for baking. I'm going to email them to find out for sure.
