What cut of beef should I buy to grind at home for burgers?

The best combo I've done is equal parts brisket, sirloin and dry aged short ribs

It's not new. It's been there almost 2 years. It could be a good upscale breakfast place, it just misses the mark in just about every area.

Equal parts short rib, brisket and sirloin(if you want really good then dry age at least one). Grind fresh, shape loosely then liberally salt and a bit of pepper and cook on a hot grill or griddle and top with either American, cheddar or blue cheese. Martins potato roll brushed with bacon fat or butter and toasted. Mayo on the bottom bun and ketchup, onion and pickles with the American cheese...avocado, arugula and BBQ potato chips with the blue..and bacon, lettuce and spicy mustard with the cheddar

how much fajita seasoning to use?

As much as you like. If you like the meat really seasoned use a lot, if you're not a spice nut use a tsp or 2
Use a Tbls on each side of the meat this time(remember to squeeze a lime on it for the last 30 mins) and let it sit covered for 2 hours. This way you'll have a starting point...too spicy, then use less or vice versa

What's your fave asian shrimp recipe for dinner?

3/4 cup flour
1/2 cup cornstarch
1 Tbs kosher or sea salt
1/2 Tbs fresh cracked black pepper
1 lb small peeled shrimp

2 eggs

Oil for frying

Beat the 2 eggs in a bowl and combine the dry ingredients in another bowl. Roll the shrimp in the flour mix, then eggs and back to the flour mix. Fry in batches 2-3 minute @360 until golden, drain well.
Toss in the sauce until coated

sauce: 2/3 cup mayo
1 1/2-2 TBS Sriracha hot sauce
1 1/2tsp honey

Buffalo Wings - Let's do Something Different

Jerk Marinade

2 tsp fresh thyme
1 tsp allspice
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 cup scallions

4 jalapenos or Scotch Bonnets(depending on how much heat you want)
1/2 cup white vinegar
1/4 cup soy sauce
2 tbs oil
1 tbs salt
pinch garlic powder

Combine all ingredients in food processor.

Good on fish,chicken, pork.
Will keep for a long time in the refridgerator.

Buffalo Wings - Let's do Something Different

Mine is similar
2 tablespoons canola oil,
3 tablespoons grated ginger
cook several minutes until just starting to caramelize, add
1/4 cup sake
1/4 cup rice vinegar
2 tablespoons sesame oil
1/4 cup honey
1/2 cup soy sauce
1/4 cup sriracha sauce,
cook 5-10 minutes until slightly reduced

Bake wings in the oven 20-30 minutes at 350
Cool slightly and coat with a 50/50 mix of flour and corn starch
Fry the wings for 3-4 minutes until crispy
mix the sauce with 1/2 cup of mayo and coat the wings with the sauce
Serve with cilantro, chopped scallions and some toasted sesame seeds

I work in Costco's bakery, and yes we produce that many pies in the few days leading up to Thanksgiving. I know that my store made and sold 2,000 pumpkin pies Tues/Wed(and another 1,500 apple and pecan) and we do put them on pallets to store in the cooler until we need them

Two years ago I did a big NYEve dinner for 20 people that my FIL did a wine with each course and I did a beer
I don't remember the wines, but I remember my menu

First: Tuna sashimi with daikon, fresh grated ginger and a soy dipping sauce. Beer---Unibroue-Blanche de Chambly

Second: Pan seared scallops on a trio of bacon/mushroom/onion stuffed mini bell pepper and fried mushrooms. Beer---Fuller's- London Pride

Third: Grilled mango and crispy baked prosciutto with herb ricotta and mango coulis. Beer---Weihenstephaner- Original

Fourth: Parmesan polenta with black truffles and shrimp with pineapple habanero sauce. Beer--- Unibroue- La Fin du Monde

Fifth: Seasoned ground lamb skewers with cucumber mint couscous and cucumber yogurt dipping sauce. Beer---Brouwerij Verhaeghe- Duchesse de Bourgogne

Sixth: Wagyu beef tenderloin with porcini/portabella mushroom risotto topped with white and black truffles. Beer---Wychwood's- Hobgoblin

Seventh: 3 Year aged Blue Stilton, 2 year aged French Comte, 3 year aged Australian white cheddar, some curry cashews and 3 year aged Parmesan with a drizzle of maple syrup. Beer--- Flying Dog- Gonzo Imperial Porter

Eighth: Crème Brule in a sugar cookie tartlets on a bed of mixed berry compote. Beer--- Rogue- Shakespeare Oatmeal Stout

The BJCP has to do with judging homebrew competitions, which has nothing to do with commercial applications. IIRC there are some English Old Ales that top out at 4.5%. Not what I would call an Old Ale, but I'm not the brewer

You do not need a glass carboy if you are doing ales. I only use food grade buckets and I've never had a problem. Also, metabisulphate is for wine...don't use it for beer

Finally talked my wife into trying Rincon after months of attempts. We will be back. The food was wonderful and the prices are unbelievable. I know where I'll get lunch on my day off from now on ;-)
