Gulf Shores, AL in the off season.

Nobody mentioned the Gulf Shores Steamer! This jewel is behind Souvenir City (the store with the giant shark on the way into town). There is absolutely no fried food on the menu, the patio is great in nice weather, and their steamed shrimp buckets are out of this world. Personally, I love places where the shrimp are steamed and served whole... heads and all. This place offers a great alternative to the standard deep fried seafood if your arteries are tired. (Not that there's anything wrong with fried seafood...)
Also, Mikee's has great seafood and their gumbo is delicious.
IMHO, a great way to spend a lazy afternoon in the Gulf Shores/Orange Beach/Fort Morgan area is to go from place to place and try cups of gumbo. Can't go worg with some great gumbos and cold beer.

Nutria

Andrew Zimmern did a segment on nutria on his program Bizarre Foods airing on the Travel Channel. He went out with a gentleman who clubbed a couple of nutria over the head. The gent then took Mr. Zimmern back to his place for a nutria feast. The Gulf Coast episode is available for download on iTunes:

From what I gather by looking at their website, Crustasian isn't exactly marketing themselves as a "restaurant". Looks to me like it's a bar that serves typically sub-par bar food...

Curing Cabinet?

i would like to do some more cured meats like i used to at my old house...trouble is, my new place doesn't have a nice dark spot with a steady temperature. does anyone know where i can get a cabinet that is temperature controlled? i don't need a smoker, i already built one outdoors for hot and cold smoke, but i need something that i can hang salume, beef, and maybe a couple of hams and keep it temperature controlled?

Dexter-Russell Cleaver (Need Cover!)

I need help finding a sheath for my new Dexter meat cleaver. It's floating around the bottom of my toolkit. I got the 8 in heavy duty dexter meat claever, and I need a leather cover or something to keep it from getting nicked up. I've got a side towel wrapped around it right now, but I'd like something a little more job specific. Help!

been making pies for 13 years. how close is your stone to the heating element. this may be your culprit. if the bottom is cooking so fast, the top may not get done. try different distances on your stone. we usually cook our stone-baked at around 550 degrees F.
