Red wine vinegar: worth it to buy better-quality?

I love exotic vinegars, but for red wine vinegar, which I use the most, I prefer Pompeii brand. It was in the top three in the Cook's Illustrated tasting, and has good acidity and a clean bite. It is perfect to add a pure acid note without a lot of added flavors, and I get a case, (12/16 oz bottles from Amazon for just over $24.00 including shipping.

And me... I remember reading an article decades ago about the Quaker Oats company having so much oat bran that they were selling it for horse bedding. Then the fashion for large poops came around and they got rich!

Paleo diet - any experience?

I am not at all sure the 'high fiber is good for you, the more the better.' I've seen too many already inflamed digestive systems set on fire with a moderate fiber diet. My belief is that it is a way to sell what was, until the 80s, an unsaleable product. Our puritan history of cleanliness and Godliness doesn't help. Also have to wonder if much of the benefits ascribed to fiber don't actually come from the other nutrients in high fiber foods like vegetables?

Lectin is another reason to avoid grains- a natural toxin plants use to discourage their seeds being eaten. Leaching and soaking can remove some, but it is still a negative nutrient.

Paleo diet - any experience?

I am a Nutritional Therapist, and use a 'modified Paleo/Primal' diet with every client. I find I get the best results with a complete stop of grains and dairy for the first month. Most people do well, at least short term, with some absolutes, and the results are so profound that when they do start re-introducing grains, especially wheat and corn, there is a very immediate reaction.

Not So Rookie Mistake

I do the same thing- 5 minutes in the kitchen is much longer than five minutes at the keyboard. I found a small timer that came with a cord so I can wear it, which I am now doing almost all the time. probably the best thing I ever did to enhance efficiency.

Peanuts in soda?

Back in the late sixties and early seventies, I worked at a trading post in Arizona. One thing we stocked was 'red pop' and peanuts, which was a very popular combination. If I remember right it was Nehi Strawberry in 6.5 oz. glass bottles. I tried it a couple of times, and it is an acquired taste that I never acquired. This was Keam's Canyon, the owner of the post was Byron Hunter- There was a trader named 'Yellowhorse' who would come in often with a pick up truck full of turquoise and silver jewelry and rugs, occasional pottery and kachinas. In an afternoon of wheeling and dealing, he and Mr. Hunter could go through a dozen red pop and peanut bottles, easily.

Marinating your Bloody Marys.

Love me a Bloody Maria! I agree that vodka is kind of a waste of time. There's a reason why it is called a neutral spirit... it doesn't really get on anyone's side. I do use it to make a bacon jalapeno liquer that I had in Chicago at Bella Bacino on Wacker. They use it for their Bloody Mary's.
1 quart Everclear (you can use vodka, but this works faster, and can then be diluted with distilled water- as hard as our water is, I use distilled to minimize the minerally taste.)
1 pound cooked bacon- I use the cooked crumbles from Costco
Fresh jalapenoes or other peppers, to taste. I just coarsely chop
Lately I have also added a handful of chopped cilantro and another of chopped celery leaves. Might be getting a little too complex, but try what you like. Chipotles anyone?

Put it all in a glass, lidded jar and let steep for a week. Taste. If you want more flavor, give it more time. Strain through a tea strainer, then refrigerate. Any bacon fat will go to the top, where it is easy to remove. I send it through a paper coffee filter, too. Whatever you end up with, add the same amount of water. This stuff isn't bad added to beans, by the way. The flavors stay and the alcohol cooks off.

fried catfish

I'll vote for Cherry Creek as fine catfish, but I believe the best is at Quality Seafood on Airport just below 2222. Fish tacos are also great and the fried oysters are the best I have found, if you aren't actually on the coast.

Any Galveston restaurant updates?

Nice re: fishing. I am in Austin and have heard from friends that Galveston Bay is coming back, although many of them have moved to Aransas Pass and Rockport to fish. I will miss the Diner as well, but over at 3702 Broadway is Joe's Seafood. It is fried seafood for the most part, but better than the Cajun Greek's. My late father lived in Galveston, and when I visited, that was our first trip out- fried oysters at Joe's. Went back in May on the way over to New Orleans, and of all the myriad of oysters I ate that week, Joe's were the best.
Don't expect fancy- it is 90% neighborhood takeout.

Marinating your Bloody Marys.

Just back from New Orleans, where Bloody Marys come with your eggs in the morning. There is a mix there called Zing Zang that beats anything I can make. Love the sherry idea, and will try it tonight- or later this morning... I have used 1/2 & 1/2 OJ with tomato juice, and liked that- squeeze of lime and some Tabasco and salt/ pepper- yummy! Seem to remember that it was called a Sangrita 30 years ago on the west coast of Mexico.

Food Resolutions for 2007

1: Compost- spent my gift certificate at the nursery on a worm composter.

6: No non-organic dairy again EVER. At my age, more hormones is not a desireable thing...
