Cretons
directly from my mother's recipe... which I swear by:
garlic, onions, cinnamon,a teeny weeny bit of clove, salt & pepper.
that's should do it!
Back to basics...how to cook rice perfectly?
The most important thing is the correct amount of water to rice.
I don't remember where I saw this but...till this day it's worked for me.
Put the rice in the pot an add enough water so that when you put yout finger in, the water reaches your first joint.( your finger has to touch the top of the rice)
I've been doing this for years and always worked for me.
Bring to a boil the lower to simmer
That's it
Is a rice cooker worth it?
I'm a single person household. I never thought I would buy a rice cooker. Well guess what? I did. I love it.I bought the least expensive smallest one at Target. I can't live without it.I got the one you can steam your veggies over your rice. Small, cheap easy to clean!!! You can't lose. When I have leftover the dogs get it. Definitely a good thing to have around as opposed to a buch of useless gadgets I bougth and never used. I even bought one for my mother. My father is a big rice lover and even he can figure out how to use it!!!!
I say go for it!
What do Chowhounds do for a living (besides eat of course)?
Spent the better part of my college years working in bars and restaurants in Montreal.
I am an interior designer by profession and an avid cook. Just love food!!!!!
I was so deliriously happy to discover CH. I finally belonged!!!!!!!
What Florida fish are best to eat?,the best way to cook each?
You might want to try red snapper.
It is mild, white, flaky.
I am not a big fish eater but snapper works for me.
Bone and meat grinder
Best meat grinder????
I am looking to buy a meat grinder that can grind chicken bones.
I am putting my dogs on a raw food organic diet and need to gring chicken backs and necks.
Any help would be appreciated.
Thanks in advance
El Tamarindo -- SW Ft. Lauderdale Salvadoran
I am sorry to hear of your bad experience at El Tamarindo.
I have been there 8-9 times and every time was treated absolutely flawlessly.
The staff and owner are extremely attentive and I am as white as you can be with no spanish whatsoever. (i.e french canadian)
Everyone I have ever taken there only has high praises for the place.
I would try it again if I were you.
Another odd request
Southport in Fort Lauderdale.
Local joint but good fried clams.
I've heard of Tarks you might want to check them out they've been around for ages.
There is one on US1 in hollywood
Reservation Services - weekend epicure / primetime tables
Used opentables quite a few times
Absolutely top notch.
Never had to wait more then 5 minutes even on New Year's day @ the Ritz-Carlton South Beach.
That's service
Quick, healthy weeknight meals
Takes 20 minutes:
In a baking dish put onions and garlic lay a piece of cod, salt pepper, top with a can of stewed tomatoes, capers, possibly olives cover with plastic wrap and microwave for 14 minutes.
Healthy, no fat, 1 pan clean up
Best tasting menu
Thanks! thay may just be the ticket
I appreciate your help in this
Best tasting menu
I certainly appreciate the idea but I need to expand on the proposition:
I would like fine dining for a couple who have been all around the world and tasted just about everything. They are also in their 80's ( but you wouldn't know by looking at them!) So eventhough I probably would take them to have fajitas for lunch or something casual outing for this time I want something more refined. My mother will celebrate her 82nd birthday and I want something memorable.
Best tasting menu
who has the best tasting menu for the $.
I want to send my parents to a restaurant to experience something different and diverse.
Not too fussy or rich with good accompanying wines by the glass.
I would appreciate all input from the hounds
thanks
Marie
What to order at Popeye's? [split from a discussion on the Boston board]
Never been a fan of fried anything ( except fries done well) but one night starved with little options and lazyness kicking in I stopped. Ordered the spicy version chicken . I have to admit with honey that chicken was pretty tasty. It was definitely fresh, not greasy or congealed as if sitting under lamps. Maybe it's different in Florida, they have a pretty brisk business judging by the drive throu traffic and walk in.
All I'm saying is that I was pleasantly surprised. It would not become a regular thing on my menu but in a bind.... Good to know there is an alternative to everything else out heere.
One day in Paris
pleny of restaurants around the opera.
When in Paris do as the parisians, ask your front desk person where to eat without the fuss and the touristic things.
Just about any bistro with a terrace will do you good
Enjoy!!!!
One day is definitely not enough!
What else is better in Canada?
OK here is my list:
Smarties ( and I don't want to hear about M&M)
Crunchies ( you just got to taste!)
Coffee Crisp,Croissants and breads in general
St-Viateur bagels
Smoked meats
Butter ( much richer then any other butter ever!!!)
Laura Secord butterscotch "suckers"
Laura Secord easter eggs
fiddle heads, wild garlic( ail des bois)
Oka cheese and lots of other cheeses
Cretons ( can't live without them)
Smoked meat goes without saying
biere d'epinette ( spruce beer)
And those are just from the top of my head.
As an expatriate to Florida every time I go to Montreal all of these cravings need to be addressed ASAP
Oil vs. Oil
If you want to cook with a very neutral tasting oil I would suggest grapeseed oil. It is very light, can handle high temperature. I also use it in vinaigrette because it is so mild the champagne vinegar and flavored vinegars come out better tasting.
LLOKING FOR GOOD CREOLE AND INDIAN RESTAURANT IN SOUTH FLORIDA
Creolina on SW 2nd Street in Fort Lauderdale. You really have to pay attention, it's a small place. Nothing fancy as far as decor. But the food is pretty good and the owner and staff are rather entertaining.
Pots & Pans - best bang for the buck
When it comes to knives I always go to Homegoods.Buy them individually as per your specific needs. Sets always include knives you'll never use.
As for cookware, shop around... once again you can find some great bargains at Homegoods, TJMaxx and others on individual pieces. I find my wok to be one of the things I use the most.( 1 pot, lots of veggies, little meat it does the trick for me)
What etiquette do you expect of your dinner guests?
I expect:
#1- a call if you're running late ( more then 20 min)
#2- bring your appetite and personality ( not neccessarily in that order)
#3- enjoy everyone around ( odds are you know them)
#4- drink but don't get plastered ( i don't let my dog slobber so ....)
#5- compliments are always nice but not necessary, the cleaned plates usually tell the story.
#6- reciprocity I do not expect ( we'll get together in bistro or pub if people are not comfortable hosting a dinner party)
#7- I always warm my plates ( my mother's trick) food stay warm. So people can wait for the hosts without getting cold food
#8- thank you at the end is appreciated but most of my friends are "thank you" note writers
so...
that does it for me
incredible edibles
Just letting you know that they deliverd today and it was absolutely beautiful and delicious.
At least this is a gift that does not go to waste ( but to waist)
Thakns again your help made the day!
Who would be a good Top Chef host?
Would love to see someone like Anthony Bourdain! or Gordon Ramsey!!!
They may have to bleep them out a few times but the brutal honesty would prevail!
I would doubt that either one would be interested but I dare to dream
Which one gets your vote-Brunch at The Breakers or Dinner at Four Seasons in Palm Beach???
If you plan on Brunch try Sundy House in Delray.
The gardens are delightful, the service is good and they have a good selection .The free flowing mimosas and champagne helps also.
If the weather permits ask for an outside patio table overlooking the gardens
It's definitely a very nice setting!
incredible edibles
Thanks! That's exactly what I was looking for
Got to love the Chowhound!!!!!!
incredible edibles
thanks for suggestions. My parents are in their 80's and driving at night is not one of their favorite thing. They live outside of Montreal and Valentine's day in restaurants is always too busy for them.
I just can't believe that there isn't a company like incredible edibles in Montreal
Definitely something to think about for the entrepreneurial ones out there.I know that do a booming business here
incredible edibles
Does anyone know of an outfit that does flower baskets/ bouquets out of fruits in Montreal or Laval?
I'm in Florida and would like to send something of the sort to my parents for Valentine's day
but can't seem to find anything like what I have access to here.
Or anything food/fruit related ideas would be appreciated
Thanks
