Chilaquiles

I grew up with my grandmother's chilaquiles.... made with hot tomatillo sauce and an aged crumbly white cheese. The first taste is the sauce followed by "al dente" tortilla. Everything that follows is garnish.
The prefix of the word chilaquiles is chile. And, with the tangy tomatillos no need for the lime. But, definetly the crema.... I use it sparingly to balance the acidity...... and yes.... with hot refried beans.... heaven.
I prefer my limes on a frosty margarita.
Do use old tortillas... less moisture, fry better and they craddle the sauce.

Film Feast

I think that there should be subheadings in your list...
such as food romantic; food horror, food ethereal.... then such masterpieces as Tampopo, Babette's Feast, Mostly Martha, Like Water For Chocolate, Big Night, and if you insist ...Delicatessen would find their appropiate niche...

Pickled Red Onions

On a torta, yes, I have enjoyed them... but the taco with the corn tortilla... is sacred ...
Yes, Cristina, the sauce has to be "searingly hot"... then the sweet of the onions will do wonders to the palate...

With the pierna, sauce and the sweet pickled onions... you might be able to see wonderful things...

Please don't change the original taco .... this sweet condiment would compete with the main filling... raw onions
or even in chile escabeche, I prefer.
But, I could taste your version of sweet pickled onions in a savory empanada with meat and raisins.
