The best bargain in town (Philly)
Thanks for the detailed post! I have been curious about the place....
Pulled pork: can I let it rest overnight before pulling?
Yes, it is easier to pull it while warm.
Is it a burger or is it a meatloaf patty??..
I love to dress up hamburgers and probably they would qualify as meatloaf-burgers.
I actually do feel that, for a hamburger at a more elemental level, I hardly touch the meat.
The more ground meat is kneaded, or even molded into patties, it becomes tougher.
Ideally you can form a "patty" right on the grill, no salt or other seasonings until it is on the grill. Of course, pre-salting ground meat makes it tough, too.
Then it must not be touched (tougher, yet) until it is time to be flipped.
I also like to cook it on top of chopped onions that will carmelize.
can you return corked wine?
Yes, I had the same situation and returned it to the liquor store for a replacement.
They apologized profusely and there was no problem.
Good Barbecue in York, PA
We got there today. It was worth the long drive.
I ate grouper there (really tender and juicy with a light cornmeal/flour batter) today. My wife had the pulled pork, which I sampled. I don't think it could have been much better, tender and not pre-sauced. The beans were great, as mentioned above.
We took a rack of ribs home for another day. Joe was very friendly and fun, too.
(Thanks again for the recommendation!)
Of course, the place is an hour and a half from home, but I have to go to York in a week....
Here is the website info: http://www.smokeyjoesbbq.net/index.html

You can also take a cab to any number of great places in W. Philly.
(The station has just been renovated, so that is good, at least.)
I was in New Orleans for the last Tut exhibit, I am looking foward to seeing the one at the Franklin!
Havana Joes in Pottstown--Good Chow, Great Service!
The chipotle ribs are another good item. I recently tried the ropa vieja and enjoyed it, as well. Friendly staff, as mentioned above.
Does anyone have any other dining recommendations in the Pottstown area?

Thanks for the heads-up! After living in KC, MO for many years, I am desperate for BBQ!
I love the ones voted "Best Philly BBQ", etc.... I guess they voted for themselves.
Unless you roast a whole pig, it is hard to smoke pork, I think.
I have used various smokers, with my favorite meats (and fish) for years, but even though it is usually better than the local "BBQ's," it can't compare with smoking the whole pig.
(Unless you have a large amount of meat, it is hard to keep the temps low enough not to make the wood impart a bitter taste....)
Thanks to everyone that posts about where to go for BBQ!!
We live between Reading and Pottstown, but I will drive to York for BBQ!!!!
(Enjoyable ride, too!)
ISO: Deviled Crab Soup recipe
I haven't had a chance to make it, either, but I had planned to use deviled crab ingredients, as you suggest.
If the broth/base is too strong, it will overcome the crab.
If it is cooked too long, or too hot it will ruin the crab flavor.
I imagine that a saute of the veggies, then a deglazing, reduction with some stock/white wine, with crab being added last, might be one idea.
Let us know how it goes!
What's a Good Sauce to Serve with tamales?
How about posting it your recipe as a seperate thread?
It wouldn't be buried here among the sauce postings.

(I know you probably checked with a search engine.)
I searched and found nothing similar. Also, I was at the Issac's near Reading (on Friday) and it wasn't featured that day.
You really have me curious, maybe if you can remember more about it you can re-create it yourself. Was it a cream soup?
Anniversary dinner in the suburbs?
The website reservation page indicates that you need to call one month in advance. I wonder if that is the case at this time of year?

Thank you so much! I am curious about the Mucbil Pollos.

I like the word "novely", btw, it sounds like a lovely novel!
(Or something that resembles a novel.)
You got me thinking about all the different types of sambar.
At Devi, they were both lentil-based. One featured hot red peppers. It wasn't too hot, but left a slow burn.
(The worst burn I got was from mirichi pakora at Palace of Asai.) I could see the cooks watching me take the first bite.) Devi had idli (lentil crumpets) to soak up the sambar. I didn't like them on their own, but they were pretty neutral once they had absorbed the sambar.
The dosas are the best I have had at a restaurant, but I have only had dosas at about ten places, so I am no expert! I make french crepes, but I sure couldn't make one of these, without a lot of practice. They were really thin and light. They have a large selection of sambars on the weekend buffet, or so I am told.
I need to try Himalayan and Gateway as soon as possible....
I have never made sambar at home, btw,
Here is a link; let me know what you think!

What's a Good Sauce to Serve with tamales?
What about fillings? What else is typical of tamales in Yucatan that make them different? Do you use raisins, or fruit?
What's a Good Sauce to Serve with tamales?
I have never had traditional tamales served with sauce.
I do like MINE with sauce on the side, though. Red or green chile sauce works well. Also you might enjoy a mole sauce.
It seems that many confuse salsa (for dipping) with chile sauce.
Just do what you think you and your fellow chowhounds at home would like, and don't worry if it is "authentic."
Baba Ganoush
That sounds interesting: I have never seen it without lemon juice are tahini. No kosher recipe (or any other) I have seen leaves them out. It should not taste sour, even with the juice of a whole lemon. Many years ago, I remember making it with mayo, because I was out of tahini. (I can't remember what it tasted like.)
I am curious to see what you come up with. Call that chef!
I bought the brussel sprouts ... now how do I roast them? Tips?
That sounds like a good idea, I will try that. I usually just steam them, with a little butter, garlic and kosher salt and pepper, until they are just tender crisp. Then I squeeze a little lemon juice on them before serving.
I love roasting veggies; oddly enough, I have never roasted the little green monsters!
Does anyone remember Tom and Jerrys?
Why, of course, they're why I became addicted to alcohol at age three!! (just kiddin')
Thank you for posting a link to the recipe!

Good diners in the western Philly burbs?
I used to live off of Baltimore Pike and ate regularly at the Olympia. That was a few years ago, but I imagine it isn't much different.
Most of these Greek diners are best for breakfast. The so-called "home fries" are sliced, boiled potatoes that sit in the corner the grill all day, so you better get there early! If you want hash browns, they are frozen patties (not hand grated) but are usually better than home fries.
Good luck! Try breakfast first, then, if you survive, go for lunch or dinner.
dinner recs between Lancaster and Wilmington
Yes, great food, service and even atmosphere!
(I got to it via 202 South to RT 2, but if you are coming from Lancaster, of course that would not be the way to go!)
I found it to be one of the finest area Indian restaurants;
below is the link to their website (map included)

The Palace of Asia (Indian) in Newark, DE, is very good. I wish they were closer to where I live! It is right off 202.
Steaks - Straight (plain) or Sauced ?
This super-searing works well, since the steaks are cooked as quickly as possible. It assumes that the "searer" is very competent, as I am sure you must be, or you probably wouldn't have suggested it!!
Steaks - Straight (plain) or Sauced ?
Now, many restaurants are not cooking it less well done than "medium" (which of course means more like medium well)due to health department regs.
Why is it ok for uncooked fish to be served, but not medium rare steaks?
Harrisburg Chowhound shoutout!
It was closed (TMT) the last two times I was by there, but I will take not for the future!
How to respond to really clueless posts and posters
"I do think the problem is a little worse in the boards devoted to less fodd-obsessed parts of the country, for sure."
What part of the country is that, if I may ask?
Steaks - Straight (plain) or Sauced ?
I agree that bearnaise is much more complimentary than most sauces to a fine steak!
I wish it wasn't 10:13 AM, because it doesn't seem that there is a med. rare filet awaiting me anytime soon ;>{

Thanks for the detailed review! I don't usually get a chance to hit the buffets on the weekends. It IS hard not to overindulge at these buffets. I try to not overload my plate with too much rice and lots of naan and pakora. Of course, many of the sauces are rich with ghee. I like to save room for Rasmali, if I can.
I am becoming addicted to dosas, but they are SOOO filling.....
TOI in Exton mentioned, when we were there last week, that there is quite a bit more variety on the weekend. Actually, we tried to go there yesterday, but it was closed.
Ended up across RT100, but Devi had closed about five minutes previouly, so we went next door to Asia Fusion (I think that is the name.) That turned out to be good, except the heat was not working. (The plates were really cold.) We just had to drink hot tea!
