thanks! in fact, soups were my first thought and i've already frozen some nice pea/pesto soup and some gazpacho. breads are a great idea too.

i'm looking to fill my freezer will some simple, healthy meals before our first child is born at the end of the month. i'd love some recipes for meals that freeze well. i don't want to stock up on too many pasta or meat-heavy dishes though. i'm thinking lighter fare suitable for summer.
Any suggestions?

mole dilemma

I've got a kilo or so of mole from mexico city (several varieties) and i'm looking for some innovative recipes.

Does anyone have any experience with mole incorporated into desserts? Seems like mole brownies or cookies would be wonderful but i've not been able to hunt down any recipes.

Thank you for all this wonderful information! Clearly I need to do a little more research before our trip so I can at least identify some of the major different types of Indian cuisine. I see I have some work cut out for me. Again, thanks.

cooking classes in india

I am planning a trip to India in March and would love to take a cooking class or two. I'm not interested in a full "culinary tour" of the country or a long stay at a Kerala resort with classes though I've seen lots of these advertised. We'll be there for a wedding and will need to fit in the cooking classes with a full roster of other events! Right now we're planning to be in Mumbai, Delhi and possibly one other city. Can anyone recommed a class or at least tell me where to start looking?

Make ahead meal for New Year's buffet

okay, one more question for the group.

what does everyone think of duck breast with a port sauce? i've never made duck and i know it doesn't fit the criterion of fork-only food but it seem so nice and festive. is it hard? will it be gross if it sits out and becomes room temperature? thoughts?

okay, now i'm complicating things but it would be great if there was something that was sort of a fork, no knife dish. people won't necessarily be sitting so the whole fork/knife thing is tricky.

I'm having 20-ish people over for New Year's and I'd like to set out a substantial buffet, dinner not just nibbles. What can anyone recommend for make-ahead dishes that can sit out on a buffet for a couple of hours? I could go the homey baked pasta route but i'm hoping for something a little more elegant - a meat or fish dish recommendation would be great!
