Best of the Trappist Beers
Allagash makes a very nice trappist beer. I had it on tap in Maine, and I have to say, it was great.
"Beef Chuck Short Ribs Bnls" ??
They are, basically, the same cut as the thick chuck short ribs which are sold in, mostly, butcher shops and independent stores that cater more to meat customers. There is also a short rib which is cut from the chuck tip and is, usually, an inch thick or so and about an inch or more wide with oval riblet bones. I have numerous recipes for short ribs, but you can find some very good recipes from Epicurious http://www.epicurious.com/recipes/ which has recipes from Gourmet and Bon Appetit magazines.
Remember to brown well, and use good red wine for cooking. You can mix and match all of the ribs if you like. A recipe with Rosemary makes a delightful comfort food meal.

I like the Chimay Grand Reserve best, and you are right it is subjective, it is in the taster of the beholder, so to speak. Allagash Brewing Company of Portland, ME makes a very decent trappist like brew. Check it out at this site:

Leinenkugels Beer is better than Bud, and I can't say too much more about it since there are so many better choices.

Chicago Mike, Can you buy the World Wide Stout at Sam's or Binny's? I can, almost, taste it and feel the buzz now.

The Chimay Grand Reserve may be one of the best, if not the best. However, choosing beer, trappist or otherwise, is very subjective. Let's face it, some people still drink Bud.

I have lived in Chicago my entire life and love pizza. Lou's used to much better, it is hit and miss lately. I am referring to the one on Wells St. Giordano's and Gino's are good, but Uno and Due are so so. If you really want to try something that is really consistently good, try Bacino's at the 75 E. Wacker location. This is a little different, but excellent deep dish pizza. Stay a few days and try a few pies, and decide for yourself.
Very fine strainer
I am a retired restaurant owner, (8 restaurants) and would agree on the strainer/chinoise issue, but the gentleman that suggested the gold coffee filter or coffee filter period, is not far off base for someone that doesn't want to spend the money for the other kitchen utensils. When space becomes a consideration a creative alternative is, always, at hand.
