Best meal I ever ate:
Incanto, 8/13 - Rough and edgy offal pate, loose, but bound by a caul fat girdle, with figs and a beautiful reduction (sweet, but not too).
Razor clam crudo, miraculously seasoned perfectly throughout - chewy, crunchy, fresh and savory.
Pasta with cured tuna heart and raw egg yolk - always nothing less than mindblowing. My son said that the shaves of the cured heart tasted kind of like dry olive skin...I could eat a bucket.
Lamb loin and sausage with white beans and greens....just amazing.
Handkerchief pasta with pork ragu was elevated by a frizzled duck egg - lordy lordy....
My current drink of choice:
Hendricks, club soda, lime. Heaven
I really wish I could:
bake bread-still-but with Easy Tiger in town, I don't have to have Acme FedExed to me!
My "Go-to" dinner party dish:
Lasagne - homemade pasta, homemade ricotta, homemade pork ragu, homemade sausage, homemade meatballs, and good fresh mozzerella - salad of red leaf lettuce, arugula, avocado, blanched asapragus with a mustard vinaigrette. Bread - the best available, since although i can make a lot of things I can't bake bread to save my life.
My favorite comfort food:
mofongo, asopao, a farm fresh egg frizzled in olive oil, topped with sea salt, with a slice of good, honest bread (as mfk would say - and now reliably available from Easy Tiger in Austin - oh, that levain...)
