LOL, I thought the comment from bethd127 was kinda funny as well. No offense but almost every restaurant gets at least some things from the big boys. Sometimes you have little choice. Also, there are quite a few 'classically' trained chefs here in town. Just FYI.

right, fish can not fly planes, so obviously they are not by themselves. With our proximity to the carolina coast, florida, and louisiana, i think it is unreasonable to say we are "very" limited in seafood selection. Of course a chef wants a wide variety of fish, but working with ingredients and finding creative ways to present your "regional" bounty is a one telling sign of a good chef. on the other hand, presenting different and "unusual" products to the customer is also the sign of a good chef, I guess.

i love great fish as much as the next foodie, but flying fish in from hawaii regularly is very taxing on our enviorment. its a widely done, but it is one of the more irresponsible things a chef can do when talking about sustainability, and the impact on our earth. growing up in the southeast region of the US, i have found great seafood is at our back door, you might just have to fish around awhile to find it.
Disappointment at Lilette
i think stella is a great place, but best in the city?. the lack of local and regional seafoods and meats at stella is a little annoying. w/ such a great bounty of ingredients it confuses me the way everything is flown in from half way across the world. it inflates prices, which cuts out a whole demographic of diners. it shows a severe lack of sustainability and disregard for a more "green" cooking. with that being said the pastry chef is progressive and amazing.
Need new food in Asheville area!!
lorettas on patton (downtown) for lunch. table on college street for dinner or lunch. over easy cafe (broadway) for breakfast. Greenlight cafe? (on the main road through town) in black mountain for great vegetarian. cocina latina on patton (west asheville) for dinner. \\

Good Cheap to Moderate Eats in Asheville
fuddruckers?, seriously, what the fuddruckers are you saying? asheville obviously needs a burger joint. table has a good burger and fries.
Brooklyn Hound in NOLA
can i just suggest Adalphos on top of the apple barrel bar on frenchmen(across from dba). defenitely a locals place. great food, ambiance, cheap but decent wine. A little rough around the edges, but a real gem. it has italian cajun cuisine. i dont live in new orleans anymore, and i miss adolphos, verti marte, monas, and liuzzas the most. oh, and horinoya.

tomato cucina is in west asheville not east asheville but worth the drive imo.

peristyle is not what it used to be since anne kearney left. I would go to Couchon. Great food, nice space. lots of small plate options. Though not much or any seafood.

they have great poboys, especially of the fried seafood variety, if you get a dinner with 2 sides you pay 7 or so dollars, and your to go box will weigh 2 and a half pounds.
Asheville, NC recommendations?
loretta's on college. best sandwich in downtown, by far (especially npw that viva europe has been closed). its only open lunch monday- friday. get to 12 bones, please, in the river/arts district. only open for lunch monday -friday. over easy cafe on broadway for breakfast/lunch(get breakfast) only open wednesday-sunday. ali baba in grove arcade for mediterranean priced by the pound. little havana across from grove arcade for a cuban (mmmm).

it can be, definetely . he greats great gulf seafood as well, shrimp and oysters, from i would just go and look in the case. see and smell for yourself. its called Miramar, not miramr like previously typed.
Tapas?
vegas tapas in metarie. rio mar(seafood centric)in warehouse district. i dont know if this is still going on, but at Bachanal wine store in bywater on cerain nights the old chef from marisol does a special tapas style menu. IMO, best overall food experience in the city post k. A must for a foodie.
Looking for a few things in the Asheville area
miramr seafood, off hendersonville road, near southside cafe is now carrying fresh/frozen north carolina and virgina raised chicken, beef , lamb, rabbit (if you special order). all raised by small sustainable family farms. the pork is wonderful. i know some of the pork is finished on a diet of acorns(mmmm). also, IMO best retail seafood in the area by far.
